I was also looking for French einkorn, but every seller was charging twice what I paid 6 months ago. Six or seven dollars a pound for grain, even if it is imported organic, is price gouging in my book.

Answer: It should be as nutritious. The main difference should be texture, if anything. I always do regular.

Answer: Using a pot with a lid, add farro and water at a ratio of 1:2 (i.e. 1c farro + 2c water). Bring to a boil. Cover and reduce to low heat. Simmer for 10 min. Tips: use slightly less water than called for and allow 10 min to stand to allow absorbtion of all liquid. Add salt, pepper, spice (or cook in broth) to change it up.
