| Answer: | I would say plan ahead and order them just before you cook them. The best ribs are cooked low and slow, so It's usually a Saturday project for me. However, I put them in a very cold part of my refrigerator where they chill very thoroughly. If I knew I wasn't going to cook them for a week, I'd freeze them. Then maybe bring them back to life slowly and you can put them in a cold brine to set them up for cooking. They're good ribs, not trimmed to the bone like so many out there. More expensive, but I think they're worth it. |
