For Dry Ribs:
- Coat both sides of ribs evenly. Cover and marinate 4 to 8 hours in refrigerator.
- Cook in covered dish in oven at 300˚ for 3 hours. Uncover, coat top of ribs with additional rub and let cook for 1 more hour.
- For WET Ribs: During last hour coat with favorite flavor of Bone Suckin' Sauce.

Answer: | I wouldn't call it hot, but definitely spicy. I like to make my own rub, including a fair amount of brown sugar (like most rubs), but bought a bottle of this at Sam's Club (who doesn't sell it anymore, it seems) just so that I'd have a backup for times when I might run out of my own, but might be short on time to whip up a new batch. This rub has no sugar and no flour, both of which would weaken the flavor. When I first started using this, I missed the sweetness of my own rub (though you could add your own sugar, I didn't), but the flavor grew on me. Just a light sprinkling adds a good amount of flavor to whatever you use it on. Use more if you like spicier. |

Answer: | Sugar carmelizes at around 290 degrees and starts to burn above 350. If you cook low and slow (225-250) the sugar won't burn. |

Porkosaurus began with only a handful of FedEx employees who equally enjoyed barbecue and camaraderie. After many backyard barbecues with family and friends, we decided to throw our hats into the competitive cooking ring. Our newly created team quickly learned that cooking in the back yard was vastly different from that of a competitive barbecue. Determined to master the competitive circuit, we cooked, ate, reflected, learned, and repeated.
We even analyzed our competitors by devouring all the barbecue we could get our hands-on. Through these other competitors, we learned the secrets of low and slow cooking.
What started as a local team in Memphis grew to include members from all over the country and all different backgrounds.
The company we are today is still made out of some of those original FedEx Aircraft Mechanics, but also includes a FDNY Firefighter, a Philly Policeman, an HBO Webmaster, a couple of Air Traffic Controllers and so much more. Our Company is as diverse as our flavor is unique. When Porkosaurus started as a small Competition BBQ Team over 25 years ago, we never imagined it would grow to be the award-winning BBQ Company it is today.
