I put a month's worth of whest in a vacuum freezer bag, vacuum seal it with an Amazon oxygen absorber pack, to keep it from going rancid (from the natural oils in the berries) AND a moisture absorber, to help it stay dry. Alternatively, use a small piece of cloth or a pouch of UNTREATED (no oil coating on the steel wool to reduce rusting) FINE 000 gauge steel wool inside the bag, will help remove the moisture (by rusting) & remove oxygen too, (by rusting as well). I remove the cloth pouch of steel wool when I unsealed the bag, and discard it, after inspecting it to see how much oxygen and moisture it "absorbed" by rusting. COOL, DARK, NO AIR, AND DRY, and your wheat berries can last for over a decade. I've heard of people keeping unground grains for decades this way. |

Answer: | Light rye flour is generally a mix of white and rye flours, and dark rye is the equivalent of whole grain rye flour – it has all the bran and the germ in the flour and light rye does not. The company probably wanted to clarify that the their product is whole grain. This company only sells whole grain rye and other specialty flours. They did not change. |

Answer: | If you only want to use the rye flour, the bread will be very small, squished and heavy. This is what I do using my bread machine: I use 1.5 cups of rye flour, 1.5 wheat flour (of the same Organic Milling Company) and 1 cup all-purpose generic grocery store flour (I like Trader Joe's all purpose unbleached flour, but it doesn't have to be TJ'S). The all purpose flour is not as healthy, but it holds the bread together. If you skip it and use just 50 50 mix of rye and wheat flour, the bread may easily crumble. I also add 2 tsps of salt, 1 tsp of sugar, 1 Tbsp of oil and 2.75 tsps of Red Dry Yeast. The bread rises nicely and it's much puffier than bread made only from rye flour. |

Answer: | If your bread recipes call for un-milled, malted rye grain from which the sugars have not been extracted yet, this is a good product. I also bake quite a bit of bread and have many books on the subject. The recipes that call for malt, whether it's rye or some other grain, usually mean dried malt extract (DME) which is a very fine powdered, fermentable sugar. It also comes in liquid form which resembles a thick syrup that some bread recipes also call for. Malt extracts are derived by coarsely milling the malted grains and then soaking them in 150 - 160 degree (F) water until the starches are converted to sugars. A lot of the recipes I have seen that call for malt are not very explicit about what kind of malt they mean. |
