Answer: This particular brand harvests their yuca at a very young stage so that the fiber/starch ratio mimics that of wheat very closely. Waiting longer to harvest produces larger yuca, and therefore more flour for your money, but you won't necessarily have consistent results in your final product. The process of drying the yuca also plays a huge roll in the final cost. Many Cassava Flours are sun dried for days, which is definitely cost effective, but leaves opportunity for mold growth. Question: How is this product processed? Raw cavassa is poisonous
Answer: Cassava flour is not poisonous. It's true that raw cassava root contains naturally occurring cyanide compounds (also found in almonds and spinach) but this is only an issue when consuming raw cassava. This product is not raw cassava, it is cassava flour which goes through peeling, washing, soaking, drying and milling etc. We are also 3rd party tested like all flours to ensure its the best natural cassava flour available. The same advice goes for not eating raw potatoes, raw kidney beans, raw sprouts, raw meat, raw chicken, raw almonds, raw cookie dough etc. I hope this helps explain.   • Is Tapioca same thing as cassava flour? No. Cassava flour and tapioca flour are different things even though a lot of people use these two terms interchangeably. Moist Chocolate Cake

Ingredients:

  • 2.5 cups Cassava Flour
  • 1 cup unsweetened cocoa powder
  • 1 cup honey or maple syrup, 1 cup mayonnaise
  • ½ cup milk (can also use almond milk), 3 eggs, 1 cup sugar, ¾ cup oil or melted butter, 2 tsp baking soda, 2 tsp vanilla extract
  • ½ tsp salt, 1 cup hot water (add this last carefully)

Instructions:

  1. Preheat oven to 350 degrees F. Grease baking pan and line with parchment paper. Wet mix - Combine sugar and oil or butter until smooth then add all wet ingredients except the hot water(this comes last)
  2. Dry mix - Mix all dry ingredients including cassava flour, cocoa powder in separate bowl and then pour in wet mix in until smooth. Carefully mix in hot water (this is what increases cake moisture)
  3. Pour batter into pan and bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 to 35 minutes.Let cool & serve

Cassava Flour Tortilla

Ingredients:

  • 1 ½ cups cassava flour
  • ½ tsp. salt, ¼ cup olive oil, ¾ cup warm water
  • Optional – ¼ tsp garlic powder for a nice flavor surprise

Instructions:

  1. Mix together all the ingredients until a nice dough begins to form. If dough is too wet, please add cassava flour, if too dry add a tbsp of water at a time till tortilla consistency
  2. Knead the dough until smooth and divide into six dough balls.
  3. Use a tortilla press or roll each dough ball between two pieces of parchment paper until thin
  4. Heat a nonstick skillet over medium high heat. Place tortilla on the skillet for about 1 min on each side and flip
  5. Remove, stack on a plate & cover to keep warm. Serve with your preferred fillings.

  1. Whisk together all dry ingredients in a large mixing bowl. Add fat and rub into the flour with your hands until crumbly and the texture of cornmeal.
  2. Add warm water and thoroughly mix with a spoon until the dough feels well hydrated.
  3. Let sit for 10 minutes while the flour hydrates and absorbs the liquid. The dough should be firm and springy; add more water and let sit again if necessary.
  4. Meanwhile, preheat a skillet over medium heat.
