The buckwheat plant is extremely hardy and resilient, which makes it easy to grow without the use of chemicals. The green label is organic with an 11% alcohol base. There is also a blue label bottle which is organic and non-alcoholic, with a vegetably-derived glycerine base. Those with alcohol have the consistency of water, and some people think they mix better into beverages. The glycerine-based kind is a bit viscous (about like pancake syrup), but I haven't found it any less mixable, even in iced beverages. Then there are the flavored ones, which come in French Vanilla, Chocolate, and more--I haven't tasted any of those. I don't know whether the minute amount of alcohol affects my meds, but I currently use the organic glycerin with the blue label to be on the safe side. I hope this answers your question, Crystal--there's a lot of confusion about the different labels, and "Now Foods" hasn't really made it easy for consumers not fastidious about researching ingredients. |

This stuff is amazing. I am super sensitive to odd tastes. I have never been able to use an arificial sweetener because they don't taste quite right. Allulose is the first time I can do that. It really does taste just like sugar but a little less sweet so I just add maybe 1/4 to 1/ more for the same flavor. I've only used the Wholesome granulated. I've noticed other brands will mix it with erythritol or sucralose which I can't use. |

I was surprised that it worked, but still a little more difficult to roll out without crumbling compared to Japanese buckwheat flour (soba-ko), which is unavailable in the US. The buckwheat taste and aroma was very mild compared to Japanese soba-ko. Still, a better buckwheat noodle than the dried ones you can buy at Japanese grocery stores which are always less than 50% soba-ko. |

Answer: | I am not the miller, but I believe that it is milled using shared equipment because it is not designated certified gluten free. |
Question: | Is this one processed in a factory and on equipment that processes peanuts, legumes, corn and/or wheat? Does it taste like buckwheat |
Answer: | I contacted Haldeman Mills with your question and received this reply: "Buckwheat is not a grain, it comes in as a fruit. So recipes usually bring in some other flour to get the replacement of the gluten needed to make the baked good stand up and not go flat." Hope this helps! :) |
