Answer:	I looked it up on other sites, and it is your typical commercial creamer type recipe. If you worry about allergies to the the chemical additives, look for powdered vanilla bean, which bakers like because it is only the vanilla bean. White powders have a lot of additives besides the dried milk powder that makes it white and made for coffee.

Question:	Has anyone used this to drink as a strong coffee? it's 30% cheaper than starbucks via. only reply if you have actually used it as coffee/espresso
Answer:	I just tried to make a shot of espresso with it the way you would with Medaglia d'Oro instant espresso, and it doesn't really have a crema or taste like espresso. Get Medaglia d'Oro if you want espresso to drink. This is best for baking.
Question:	Can I just add a couple of tablespoons to the brownie mix directions? Searching on-line shows a lot of complicated directions
Answer:	I just saw this question, so sorry for the very late response. Having baked professionally for many years, I would definitely not recommend using "tablespoons" of espresso powder. If you are wanting to enhance the flavor of the chocolate in a mix, then add half a teaspoon (or up to three-quarters of a teaspoon) to the dry mix and whisk it together to blend. This will give your chocolate a deeper flavor. However, if you are going with mocha brownies, then add a tablespoon. Espresso powder is very strong and a wonderful addition to anything chocolate - but, only in moderation. Otherwise, it will simply overpower the flavor of the chocolate - especially, milk chocolate.

Answer:	Yes, it has the consistency of cocoa powder and blends in better than instant coffee, also you don't need as much as it is stronger than coffee powder.
Question:	Is this best stored in the fridge or freezer or would that add moisture? I've read different opinions so thought I'd ask here
Answer:	From the King Arthur Flour website: The powder will naturally clump when exposed to moisture, so in addition to keeping the container fully closed, you may want to try putting the jar in a Ziploc bag and/or storing in the freezer (especially if you're in a humid climate). We also find that a quick pulse in a spice/coffee grinder helps turn any hard clumps back into powder...Try storing it in a cool, dry place in an airtight container, and to prevent hardening you can put a silica packet (like the ones that come in pill and vitamin jars) right in with the espresso powder.

Cape Cod Soft Molasses Cookies

1. Preheat the oven to 350°F. Lightly grease (or line with parchment) two baking sheets.
2. In a large mixing bowl, beat together the butter, sugar, salt, and baking soda until they're well-combined.
3. Beat in the egg, and then the molasses, scraping the sides and bottom of the bowl to blend in any sticky residue.
4. Add the flour, oats, crystallized ginger, fresh ginger, spices, and espresso powder. Mix just until thoroughly combined.
5. Scoop the sticky dough into 1 1/2" balls; a tablespoon cookie scoop works well here.
6. Roll the balls in sugar (either granulated or coarse), if desired. This is easily done by sprinkling the sugar into an 8" cake pan, and dropping the sticky dough into the pan. Shake the pan to coat the dough balls with sugar.
7. Space the cookies on the prepared baking sheets, leaving about 2" between them.

Bake...

Bake the cookies for 8 to 14 minutes; bake for the shorter amount of time on a dark cookie sheet without parchment; the longer time if you've lined your baking sheet with parchment. The centers will look soft and puffy; that's OK. Cookies baked for the shorter amount of time will be VERY soft; bake them longer for a firmer cookie.

Remove cookies from the oven, and cool right on the pan; or transfer to a rack to cool. To maintain soft texture, store at room temperature once cookies are completely cool.

Place the rollers you removed into the new 'apron' or 'sleeve' with one at the top and one at the bottom of the sleeve. 5. Start with the non-movable roller and insert one end into the rolling machine. 6. Gently pry apart the the side of the machine and insert the other pin in the other side of the rolling machine. 7. Insert the movable roller into the top of the slot. 8.
