Quinoa and Ratatouille Stuffed Peppers
Ingredients:
6 small whole red, yellow or orange peppers
2 cups cubed eggplant
2 cups cubed zucchini
½ tsp salt
1 cup vegetable broth
½ cup quinoa
¼ cup Filippo Berio Olive Oil
2 cloves garlic, minced
2 tsp dried Provençal seasoning
1 cup shredded Gruyère cheese
2 tbsp Filippo Berio Balsamic Glaze
Directions:
Slice tops from peppers; remove ribs and seeds. Slice thin layer from bottom so peppers can stand upright. Chop tops and set aside. Sprinkle eggplant and zucchini with salt; let stand in colander for 30 minutes. Rinse under cold water and pat dry.
In saucepan set over medium-high heat, bring broth to boil. Add quinoa and reduce heat to simmer; cover and cook for about 15 minutes or until tender and liquid has been absorbed. Fluff with fork and set aside.
Meanwhile, heat oil in skillet; saute garlic, chopped peppers, eggplant, zucchini and Provençal seasoning for 7 to 9 minutes or until golden and tender. Stir in quinoa.
Preheat oven to 350°F. Place hollowed-out peppers in 13- x 9-inch baking dish; spoon quinoa mixture evenly into peppers. Cover with foil and bake for about 50 minutes or until filling is heated through and peppers are tender. Remove foil and sprinkle with cheese; bake for about 10 minutes or until cheese is melted and golden. Drizzle peppers with balsamic glaze.
Tips:
Add pine nuts, toasted chopped almonds or cashews to quinoa mixture.
For a vegan option, replace cheese with bread crumbs.

Dark Chocolate and Cherry Cheesecake
Crust:
1½ cups graham cracker crumbs
⅓ cup Filippo Berio Extra Light Olive Oil
¼ cup packed brown sugar
Filling:
¾ cup chopped bittersweet chocolate
1 tbsp Filippo Berio Balsamic Glaze
3 pkg (each 8 oz) brick-style cream cheese, at room temperature
1 cup granulated sugar
3 eggs
1 cup sour cream
1 tsp vanilla
Cherry Topping:
3 cups frozen cherries
¾ cup packed brown sugar
1 tbsp Filippo Berio Olive Oil
2 tbsp cornstarch
2 tbsp Filippo Berio Balsamic Glaze
Directions:
Crust:
Preheat oven to 350°F. Mix together graham cracker crumbs, oil and sugar; press into bottom of 9-inch springform pan. Bake for 8 minutes; let cool. Reduce oven temperature to 325°F.
Filling:
Meanwhile, in heatproof bowl set over saucepan of hot (not boiling) water, melt
chocolate, stirring until smooth. Remove from heat and stir in balsamic glaze. Let cool slightly.
Using electric mixer, beat together cream cheese, sugar and melted chocolate mixture until light and fluffy. Beat in eggs, one at a time. Beat in sour cream and vanilla; pour over crust.
Wrap outside of springform pan in heavy-duty foil. Set inside roasting pan and pour in enough boiling water to come halfway up side of springform pan. Bake for 90 to 100 minutes or until sides are set and center is still slightly jiggly; let cool for 5 minutes. Run knife between cheesecake and pan; let cool completely. Refrigerate for 24 hours.
Cherry Topping:
In small saucepan, heat cherries, sugar, olive oil and ½ cup water over medium heat; bring to boil. Reduce heat and simmer for 5 to 6 minutes or until sugar dissolves. Whisk cornstarch with 2 tbsp water; whisk into mixture. Cook for about 3 minutes or until thickened. Transfer to bowl; cover and refrigerate for at least 2 hours or up to 1 day. Spoon over cheesecake; drizzle with balsamic glaze.
Tip:
Substitute gingersnap or chocolate crumbs for graham cracker crumbs if desired.

Ingredients:
3 tbsp Filippo Berio Olive Oil, divided
2 red peppers, seeded and thinly sliced
1 onion, sliced
2 cloves garlic, minced
½ tsp each salt and pepper, divided
¼ tsp chili pepper flakes
¼ tsp chipotle chili powder
2 tbsp Filippo Berio Balsamic Glaze
2 tbsp lime juice, divided
1 cup canned black beans, rinsed
½ cup diced onion
¼ tsp each cumin and coriander
2 New York strip steaks (8 oz each)
4 large whole wheat tortillas
Lime wedges
Directions:
Heat 2 tbsp olive oil in skillet set over medium heat; saute red peppers, sliced onion, garlic, ¼ tsp each salt and pepper, chili flakes and chipotle chili powder for about 4 minutes or until softened and golden. Drizzle with balsamic glaze, and 1 tbsp lime juice. Remove from skillet; set aside.
Heat remaining oil in skillet; saute black beans, diced onion, cumin and coriander for about 4 minutes or until onion is softened. Remove from heat and mash beans with remaining lime juice; set aside.
Preheat grill to medium-high heat; grease grate well. Season steaks with remaining salt and pepper. Grill for 3 to 5 minutes per side or until internal temperature reaches 145°F for medium-rare. Let stand for 5 minutes; slice thinly across the grain.
Warm tortillas in microwave oven for 15 to 30 seconds. Spread black bean mixture down along center of tortillas. Divide pepper mixture and steak among tortillas; fold over tortillas to enclose filling.

Serve with guacamole if desired.
