14 best balsamic vinegar glazes
Balsamic vinegar glazes, also known as balsamic reductions or balsamic glazes, are thick, syrupy condiments made from balsamic vinegar. These glazes are used to add a sweet and tangy flavor, as well as a glossy finish, to a wide variety of dishes. Here's what you need to know about balsamic vinegar glazes:
Ingredients: Balsamic vinegar glazes are typically made from high-quality balsamic vinegar. To create the glaze, the vinegar is simmered and reduced along with sugar or other sweeteners. The reduction process thickens the liquid, creating a syrupy consistency.
Flavor: Balsamic vinegar glazes have a rich, complex flavor profile. They are sweet and tangy with a depth of flavor that includes hints of caramel and fruitiness. The reduction process concentrates the vinegar's flavors, resulting in a more intense and nuanced taste.
Uses:
- Drizzling: Balsamic glazes are often drizzled over various dishes as a finishing touch. They can be used on salads, grilled vegetables, meats, seafood, and even fruits like strawberries or peaches.
- Marinades: They make excellent marinades for meats such as chicken, pork, or steak. The sweet and tangy qualities of the glaze can enhance the flavor of the meat while also helping to caramelize the surface during cooking.
- Glazing: Balsamic vinegar glazes can be brushed or spooned onto roasted or grilled foods in the last few minutes of cooking to create a shiny, flavorful glaze.
- Cheese Pairing: They pair wonderfully with various cheeses, especially aged cheeses like Parmesan or Gouda. Drizzle them over a cheese platter for a delightful contrast of flavors.
- Dipping Sauce: Balsamic glazes can be used as a dipping sauce for bread or even as a dip for fresh vegetables.
Varieties: Balsamic vinegar glazes can come in different flavors and variations. Some may include added ingredients like figs, honey, or herbs to create unique flavor profiles. You can also find white balsamic glazes, which are made from white balsamic vinegar and tend to be slightly milder and sweeter than the traditional dark balsamic glaze.
Store-Bought vs. Homemade: While you can make balsamic glaze at home by reducing balsamic vinegar and sugar in a saucepan, many stores offer pre-made balsamic glaze products for convenience. These store-bought versions are often ready to use and come in squeeze bottles or jars.
Balsamic vinegar glazes are a versatile and flavorful addition to your pantry. They can elevate the taste of a wide range of dishes and are particularly popular in Mediterranean cuisine. Their sweet and tangy profile adds depth and complexity to both savory and sweet creations.

Modena: The Balsamic Capital of Italy
Balsamic Vinegar of Modena is often imitated, but can only truly be called so if it is made with grape must from Modena, Italy. This acidic, velvety liquid is best used one drop at a time for salads, fish and meat marinades, and even fruit or cheese. Balsamic Vinegar of Modena can be traced back all the way to the Roman and Middle Ages.
On Meat
Balsamic glaze is divine on meat. Oven roast or BBQ your favorite type of meat with a balsamic marinade and then drizzle balsamic glaze on top. This creates a savory-sweet flavor that is impossible to resist.
On Ice Cream
Believe it or not, balsamic glaze is often used on sweet food such as ice cream and fruit. The glaze adds a richness and a luscious texture as well a new dimension of flavor. This combination of sweet, savory and tangy flavors is complex but oh so satisfying.
On Pizza
Next time you have a slice of pizza or flatbread, try drizzling some balsamic glaze on top. The glaze brings a moist, complimentary texture to the harder, dryer texture of the bread. It also provides an excellent, bright foil to the rustic tomato sauce.

User questions & answers
Question: | May I buy Due Vittorie in 16.9 fluid oz size |
Answer: | I don't believe so. |
Question: | is this kosher |
Answer: | No this product is not Kosher. |
Question: | Why's the listing say "smoother than other balsamic vinegars (especially ones with wine vinegar)" while product label shows this is part wine vinegar |
Answer: | This balsamic is thick and smooth. It doesn’t have a powerful vinegar punch that most balsamic vinegars sold in the US have. You can easily find vinegars like this one in Italy but it’s much harder to find in the US. |
Question: | If this is aged 15 to 18 years, why doesn’t the product description say so? I would like an answer from the producer |
Answer: | By law, iGP balsamic vinegar from Modena can’t be labeled with an age. DOP balsamic can only be labeled “affinato” (at least 12 years old) or ”extravecchio” (at least 25 years old). Some producers skirt the law by labeling their IGP products with how many times they’ve been transferred (“travasi”) to smaller barrels in the batteria. that typically happens once a year, so if a bottle says “10 travasi,” it’s likely 10 years old. |

True balsamic vinegar made from a reduction of pressed Trebbiano and Lambrusco grapes from the province of Modena
Due Vittorie is situated in the heart of the province of Modena, works with Modena in its heart and is a fine example of the genuine quality of the agricultural industry of the Emilia area.
Traditional balsamic vinegar is produced from the juice of just-harvested white Trebbiano and Lambrusco grapes. Surrounded by its own vineyards – to produce the raw material – the company continues to work according to tradition.
Quality Meets Tradition
The slow ageing is a fundamental requirement for obtaining an excellent balsamic vinegar.
Due Vittorie Oro spends a good part of its life in durmast barrels that encourage the transfer of tannins and the absorption of the essences of the wood.
Before bottling, the balsamic vinegar undergoes rigorous laboratory testing to yield the high quality of the product and compliance with the regulations currently in force.
