12 best true olive oils
True olive oil, often referred to as extra virgin olive oil (EVOO), is a premium and high-quality cooking oil made from the pressing of olives. Here are some key points about true olive oil:
Extraction Process: True olive oil is extracted solely by mechanical means, without the use of chemicals or excessive heat. The olives are crushed to release the oil, which is then separated from the solid components through centrifugation or pressing.
Olive Varieties: The flavor and aroma of extra virgin olive oil can vary depending on the types of olives used. Different olive varieties result in oils with distinct characteristics, ranging from mild and buttery to robust and peppery.
Quality Standards: True olive oil must meet specific quality standards to be classified as extra virgin. These standards include low acidity (usually less than 0.8%), no defects in taste or aroma, and adherence to certain sensory criteria.
Flavor Profile: Extra virgin olive oil is known for its rich, fruity, and sometimes slightly bitter or peppery flavor. The taste can vary based on factors like the region of production and the ripeness of the olives.
Health Benefits: True olive oil is considered one of the healthiest cooking oils. It is rich in monounsaturated fats, particularly oleic acid, which is associated with various health benefits, including heart health and reduced inflammation.
Cooking Uses: Extra virgin olive oil is versatile and suitable for various cooking techniques. It is often used for sautéing, roasting, grilling, and as a dressing for salads and vegetables. Its delicate flavor can enhance the taste of many dishes.
Storage: To maintain its quality, true olive oil should be stored in a cool, dark place away from heat and light. It's essential to keep the bottle tightly sealed to prevent oxidation.
Fraud and Adulteration: The premium status of extra virgin olive oil has led to issues with fraud and adulteration in the industry. Some products labeled as "extra virgin" may not meet the required standards. It's advisable to buy from reputable producers and look for certification labels.
Culinary Pairings: Extra virgin olive oil is often paired with balsamic vinegar as a dip for bread, and it complements a wide range of ingredients, including garlic, herbs, and various spices.
Nutritional Content: In addition to healthy fats, extra virgin olive oil contains antioxidants, vitamins (such as vitamin E), and other beneficial compounds that contribute to its nutritional value.
True olive oil, particularly extra virgin olive oil, is a beloved staple in Mediterranean cuisine and has gained popularity worldwide for its unique flavor, health benefits, and culinary versatility. It's important to choose high-quality products to fully enjoy the authentic taste and benefits of true olive oil in your cooking and culinary creations.

User questions & answers
Question: | on the large tin, the 1 liter..what is the spout like? sometimes on the tins when you pour it, it gets all over the top. picture |
Answer: | I use this tin also. What I do is, after pouring, before standing the tin upright I have a paper towel handy and wipe the excess. This prevents the residual oil from running all over the top of the tin. I will then use a damp paper towel to clean further. |
Question: | How long is the shelf life |
Answer: | Current Inventory has a shelf life of more than 18 months. But this changes all the time as we receive new inventory or sell thru. |
Question: | Is this organic |
Answer: | While not officially organic, my experience with similar products indicates that some European companies refrain from the expense and process of obtaining a certified organic product. Specifically, a few small business owners have mentioned that the certification only verifies that at least 70% of the product is organic; meaning, the remaining 30% is potentially unknown as to its quality. Possibly inquiring to the company directly about its harvesting techniques, pesticide usage, etc. can provide some enlightenment. |
Question: | Does this olive oil have a full bodied taste? Is the taste "light" on the olive oil flavor, or jam packed and heavily flavored |
Answer: | Ellora Farms PDO Kolymvari Extra Virgin Olive Oil has a plush, fruity bouquet of a true Cretan Extra Virgin Olive Oil and a singular peppery soupcon. The body is light and perfect for either cooking, salad dressings or applying to hair or body. This is a traceable Olive Oil and far far different than adulterated oils available in the market today. Trace the origin and health properties of this olive oil. Thank you ! |

Commitment To Sustainability
Climate Change is a reality that demands a higher level of responsibility from all of us.
In recognizing the severity of this issue, GAEA has minimized its impact on the climate by measuring and counterbalancing carbon emissions (CO2) of its olive oil products, in cooperation with the Swiss organization “myclimate”.
Measurements of carbon emissions are taken during the entire production cycle. This includes the cultivation and transportation of olives, the production and bottling of the olive oil and, finally, the distribution of the end product in Greece and abroad.
As a result, the GAEA olive oils have minimized their negative impact on the environment and have become the first Extra Virgin olive oils in the world certified as Carbon Neutral.

Our Premium Olive Oils
This Colavita Premium Selection Extra Virgin Olive Oil is the quintessential everyday oil that is well balanced between fruit and spice and delicate in flavor. We have sourced selections from new harvest oils to create this traditional Colavita flavor, which represents the Colavita family legacy. Cold production obtained exclusively from olives harvested in one or more of these countries: Italy (I), Greece (GR), Spain (E) or Portugal (P). Imported from Italy, this Premium Selection Extra Virgin Olive Oil bears the North American Olive Oil Association (NAOOA) Quality Seal, which means it has been tested for both quality and authenticity according to the International Olive Council (IOC) standards.
As a trusted family company we want to ensure our customers that our products are authentic. The Cermet seal certifies that Colavita Premium Italian Extra Virgin Olive Oil is obtained exclusively from olives harvested and pressed in Italy.
What is Extra Virgin?
'Extra' is the highest grade for olive oil. Virgin oil may be called 'extra' if it has less than 0.8% free oleic acid, and if it exhibits superior taste and aroma. Thus, the 'extra' in extra virgin olive oil means 'premium' or simply, 'the best'.
Why Olive Oil?
Extra virgin olive oils are not processed or refined. Extra virgin olive oil is essentially 'fresh squeezed' from the fruit of the olive tree, without alteration of the color, taste, and nutrients or vitamins. Because of the integrity of the product, and its antioxidant components, extra virgin olive oil will keep longer than all other vegetable oils.
Better than Butter?
Colavita olive oils can be used in place of butter or margarine in many recipes, such as on vegetables, rice, potatoes, and–yes–even baking! To try olive oil in your recipe, try our olive oil recipe converter.
Olive Oil Certification Programs
North American Olive Oil Association (NAOOA).
Only organization collecting samples off the shelf at the point of retail sale, which is especially important in measuring quality, which can change over time or with handling.
Only organization performing the full International Olive Council (IOC) tests for authenticity (i.e., purity).
Participants cannot choose the samples or where they come from.
Use highly experienced IOC testing facilities, most frequently in Italy or Spain, two of the largest olive oil producing and consuming nations in the world.
Grades of Olive Oil
Extra Virgin Olive Oil
The highest grade and most versatile due to the range of flavor profiles available. Virgin oil must be unrefined, have less than 0.8% free oleic acid and exhibit superior taste and aroma.
Virgin Olive Oil
Virgin olive oil is also unrefined but has a higher level of oleic acid and less bold flavor than extra virgin olive oil.
Olive Oil
Olive oil is a blend of virgin and refine. Heat and chemicals are used in the process of extracting oil and removing flaws. Olive oil contains less than 1% of oleic acid and is a household all-purpose cooking oil.
Olive Pomace Oil
Olive pomace oil is a lesser quality. It is a blend of refined pomace oil and virgin olive oil. Its mild taste is the result of a refining process using chemicals.
Refined Oil
Refined olive oil is made from refining virgin olive oils that have a high acidity level to eliminate defects. It is generally tasteless, colorless, and has no odor.

User questions & answers
Question: | Is this really for 1 Litre? The picture shows a 750 ml tin |
Answer: | The one in the photo is the Organic version of the same oil, which is 750ml. The non-organic Zoe Extra Virgin is indeed 1 Litre. |
Question: | What is the harvest year |
Answer: | Hmmmmmmmm, I wonder if you can look up the number put on products so the manufacturer can identify the batch and when it was bottled, or in this case canned (in case a particular batch poisons a couple of people, they want to know). Ah, find that number and access this link http://blog.zoebrand.com/?page_id=417 (link also tells you where to look on the bottle or can) |
Question: | Is this ok for use in bedroom playtime...wink wink |
Answer: | Yes. The label "extra virgin" signifies that it works very well with one who is a virgin. Getting what ever you have into the tightest of places is not too hard with this product. |
Question: | I have been reading about fake olive oils - is this one that has been having problems with the oil not being real olive oil |
Answer: | S. Corcoran, excuse me but the Olive Oil Times does not agree with you on "firming up" being a reliable indicator of EVOO purity. They reported on research done by the University of California Davis Olive Center: "Seven oil samples, including EVOO, lesser grade olive oils, olive oil blends and non-olive oils were placed in a refrigerator and checked at intervals up to 180 hours. Although no samples fully solidified, a sample of EVOO mixed with up to 50 percent lesser grade olive oil congealed in the bottles, meaning it could be interpreted as passing the refrigerator test even though it was not pure EVOO. The study concluded that the Fridge Test is not reliable for determining oil purity or quality." User questions & answers
Question: | What is the press date |
Answer: | The harvest date is now listed on each bottle, I just bought it at Walmart in Kirksville Mo with a date of Oct-Nov 2014. That means it was probably pressed in late 2014 and early 2015. It is the newest available. The last harvest. It is also cheaper if your Walmart carries it. Some don't. I am lucky this is wonderful. |
Question: | Is this a glass or plastic bottle |
Answer: | No, my purchase of CA Olive Oil just arrived May 2016 and it is Plastic. When I contacted amazon I was informed the manufacturer no longer uses glass bottles only plastic. The University of Davis study on storing Olive Oil states "plastic" is bad for the olive oil. I am very disappointed. |
Question: | What is the acidity level of the oil |
Answer: | I`m just a consumer, so i do not know. This olive oil tastes just like eating a green olive, so how acidic is that? |
Question: | Is the bottle glass |
Answer: | Since 2016 California Olive Oil is being packaged in plastic bottles not glass. Olive oil should not be stored in plastic. Please check to verify if bottle is glass or plastic before purchase. |

Question: | Is it good for dipping |
Answer: | I haven’t used it that way, but I would imagine it is, as it is an excellent olive oil. |
Question: | does the pour bottle have a spout |
Answer: | (I’m out of town so don’t have it in front of me). It has a plastic insert that’s not a spout but just makes it a bit easier to pour. I still find it comes out pretty quick! Easy solution would be buy a spout to attach to the bottle, or transfer the oil to a bottle with a spout. |
Question: | Is it considered “three cough olive oil |
Answer: | I would say this is a milder oil. Not at all a 3 cough..no peppery taste.... |
Question: | I'm planning to use this on my face. Does it smell strongly |
Answer: | I bought this product and absolutely love it! I use for cooking, dipping, brusetta, omg delicious!! I am very fussy with smelling my food before I eat it. This product never had a rancid smell like other oils. It has a beautiful greenish color and a delicate smell of olives. I have used on my skin at times! I don't think you will be disappointed!!
