Answer: Yes, this Entimio Intenso EVOO has a nice peppery and slightly bitter note, balanced while pronounced, as to be expected in a robust EVOO and as typical of the "Correggiolo" olive variety cultivated in the Chianti Classico area. The peppery (aka pungent) and bitter notes are the natural expressions of polyphenols (natural antioxidants present in high-quality olive oils) and a distinctive sign of early harvest well-milled olive oils. Please see our pairing suggestions in the pictures and product details, but also experiment as taste is subject and there is no right or wrong answer. Question: Hi, i read that the fda label for health benefits could be put on olive oil with phenols of a certain level, which i think your oil has. why no label
Answer: Hi, as far as I am aware, the FDA does NOT allow a health claim on the potential benefit from the consumption of olive oil with high phenolic content. The only "qualified health claim" allowed by the FDA on olive oil, which applies to all vegetable oils with more than 70% of oleic acid, is the following "Supportive but not conclusive scientific evidence suggests that daily consumption of about 1½ tablespoons (20 grams) of oils containing high levels of oleic acid, when replaced for fats and oils higher in saturated fat, may reduce the risk of coronary heart disease. To achieve this possible benefit, oleic acid-containing oils should not increase the total number of calories you eat in a day. One serving of [x] oil provides [x] grams of oleic acid (which is [x] grams of monounsaturated fatty acid)." All Entimio olive oil has > 70% of oleic acid. However, we believe the above language is so complicated, generic, and "weak", that it may confuse more than promote the use of olive oil. Indeed, few brands, if any, have written this FDA "qualified health claim" language on their packaging. A phenol-related claim is instead allowed by the European equivalent of the FDA, the EFSA, for oil with more than 200mg/kg of phenols, which is what you may have read about. As per the FDA health claim, also in Europe, it is very rare to see health claims on olive oil bottle/packaging, because the language is complicated and "weak." The "European" phenols-related claim reads something like "Polyphenols from olive have an antioxidant activity that may help maintain healthy LDL cholesterol level and lipid oxidation/antioxidants. Answer: All Entimio olive oil is filtered with paper filters allowed under USDA organic certification. This "natural" filtration method is a relatively expensive process and has the purpose of reducing water content and solid residues to ensure shelf stability and maximum health benefits for consumers. I know that other sellers promote "unfiltered" olive oil as more natural and healthier. Unfortunately, that is not true, and all olive oil experts agree on this matter. Also, for maximum transparency and safety, we test all our Entimio olive oils after bottling. By doing so, we are sure that all values (polyphenols level, free acidity, absence of pesticides and resides, etc.) reported on our listings relate to the same product you will get at your home, after filtering and bottling. And if you still want to experience unfiltered olive oil, you should do so during harvest at the producer site or at least within three, max six, months from harvest. The higher water content and solid residues present in unfiltered olive oil contribute to significantly faster oxidation and reduction in the antioxidants content of any olive oil. Answer: I haven’t used it that way, but I would imagine it is, as it is an excellent olive oil.

Answer: (I’m out of town so don’t have it in front of me). It has a plastic insert that’s not a spout but just makes it a bit easier to pour. I still find it comes out pretty quick! Easy solution would be buy a spout to attach to the bottle, or transfer the oil to a bottle with a spout.

Answer: I use this tin also. What I do is, after pouring, before standing the tin upright I have a paper towel handy and wipe the excess. This prevents the residual oil from running all over the top of the tin. I will then use a damp paper towel to clean further.

Answer: Current Inventory has a shelf life of more than 18 months. But this changes all the time as we receive new inventory or sell thru.

Answer: I purchased this product in 2015 or early 2016 so I can't vouch for the expiration date, however I do check all dates on everything I purchase and their would have been an issue if something was expired upon receipt. Please take in mind the picture they use is for the product display purposes only and only showing what the current product looks like now, they do not have to change pictures according to an expiration date running out.

Answer: Yes, they are made of BPA-free polyethylene.
Question: Does this product come in glass or plastic containers
Answer: Very thick green plastic so the oil protects from light. I read about it and glass is not always good for olive oil and the green color helps a lot to keep the oil fresh and it is a very solid container It is also safer at transportation and in the kitchen... not sure I would like to have glass container deliver

Answer: The polyphenol count is not noted anywhere. This is a good olive oil for everyday cooking. It is not bitter so my gut feel is it may not have high polyphenol count.

Answer: not knowing your definition of "organic" I can only tell you is is NON-GMO Verified, KETO Certified, PALEO Certified, WHOLE 30 Certified. And per the website, has State of California Certification that no other substances are used to cut the EVOO, so I consider it pure.
Question: Is this from 100% california grown olives? i know what the post says, but comments on another california olive ranch product makes me wary
Answer: The bottles labled Destination Series, and harvested in the 2017-2018 harvest season are not from 100% California grown olives. The label on the basic bottle you can find in stores now says Destination Series and says the olives are sourced from growers in California, Argentina, Chile, and Portugal, then refined and bottled in California. It does NOT have the California Olive Oil Council seal. It does have a seal in place of that saying it is certified Extra Virgin Olive Oil. I have an older bottle on hand from the 2015 harvest. The label says it uses 100% California grown olives and it has the California Olive Oil Council seal. This is the one Cooks Illustrated recommended where they explained olive sourcing and why it is better to buy from companies that bottle close to and soon after harvest. Many loyal customers, as you can see in the reviews, are upset about this, thinking California Olive Ranch betrayed them. They have been buying for a while and probably didn't look closely at the label. I can't blame them for feeling baited and switched. If this disappoints you, as it did me, wait for the next harvest before dismissing California Olive Ranch entirely. I have no affiliation or insider knowledge but I believe this is only a temporary change due to a bad harvest. In fact, the company's CEO is on record in the NY Times as saying the 2018 California olive harvest was a disaster for growers due to the unseasonably cold winter (elsewhere, it was reported it sent CA olive oil manufactures scrambling to find olives to stay afloat and meet demand) and that they had established partnerships with other countries a few years ago in case of this very situation. He also said at least 26% of the oil in each Destination Series bottle is from California. It was also in the news late last year that California Olive Ranch is expanding their plantings by 2000 acres, which should help mitigate less productive years.

Answer: It is extra light,not extra virgin which burns at a lower point. we just today browned a prime rib roast before baking with noproblems. Edges fried up nicely.

Answer: What I did was bought some RCA #14 stranded 2W(2Wire) speaker wire, took the speaker wire with the white strip and connected it to the red wire of the speaker and the other wire to the black. To make sure the cable was water proof I twisted the wires together and used 1/8" heat shrink instead of your normal wire connectors or marrettes. Hope that helped.

Grilled Salmon with Grilled Pepper & Corn Salsa

Ingredients:

Salsa:

¼ cup Filippo Berio Olive Oil.

3 cloves garlic.

1 tbsp seeded minced jalapeño pepper.

4 sweet red peppers, diced.

4 cups fresh corn (cut from 5 cobs).

1 can black beans, rinsed and drained.

2 tbsp fresh lemon juice.

2 tbsp fresh lime juice.

2 tbsp chopped fresh cilantro.

Salmon:

10 salmon fillets (about 6 oz each).

Kosher salt.

Freshly ground pepper.

¼ cup Filippo Berio Olive Oil.

2 tbsp honey.

1 tbsp cumin.

Directions:

Salsa:

Heat olive oil in large cast-iron pan set over medium heat; stir in garlic and jalapeño pepper. Stir in red peppers and corn; cook until corn browns slightly. Toss with beans, lemon juice, lime juice and cilantro; set aside.

Salmon:

Season both sides of salmon with salt and pepper. Whisk together olive oil, honey and cumin; place salmon in shallow pan and pour olive oil mixture over top. Refrigerate, turning once, for 30 minutes.

Place salmon skin-side up on greased grill over medium heat; close lid and grill for 5 to 6 minutes per side. Serve fish on platter topped with salsa.

Prep Time: 40 minutes.

Cook Time: 10 minutes.

Total Time: 50 minutes.

Serves: 10.

Rigatoni with Italian Sausage & Broccoli Rabe

Ingredients:

1 lb rigatoni pasta.

¼ cup Filippo Berio Olive Oil.

4 garlic cloves, sliced.

3 sweet Italian sausages.

3 hot Italian sausages.

1 lb broccoli rabe, trimmed.

½ cup dry white wine.

1 cup chicken stock.

Kosher salt and red pepper flakes.

¼ cup grated Parmesan cheese.

Directions:

In large pot of boiling salted water, cook rigatoni pasta according to package directions. Drain; set aside and keep warm.

Heat olive oil in large, heavy skillet set over medium heat; cook garlic for 1 minute or until slightly browned. Add sausages; brown well. Transfer sausages to plate; keep warm. Add broccoli rabe to skillet; stir in white wine, scraping up any browned bits on the bottom of skillet. Pour in chicken stock; cover and cook for about 20 minutes or until broccoli rabe is tender.

Return sausages to skillet and remove from heat; season with salt and red pepper flakes. Add rigatoni to skillet; toss well. Top with Parmesan cheese. Serve immediately.

Prep Time: 15 minutes.

Cook Time: 30 minutes.

Total Time: 45 hours.

Ingredients:

1 tbsp Filippo Berio Olive Oil.

1 onion, diced.

4 cups beef broth.

1 cup dried lentils, rinsed and drained.

¼ cup tomato sauce.

1 tsp dried Italian seasoning.

Salt and freshly ground pepper.

Directions:

Heat olive oil in large saucepan set over medium heat; cook onion, stirring occasionally, for 5 minutes or until softened. Add beef broth; bring mixture to boil. Stir in lentils, tomato sauce and Italian seasoning. Cover; reduce heat to low and simmer for 45 minutes or until lentils are tender. Season with salt and pepper to taste.

Prep Time: 5 minutes.

Cook Time: 50 minutes.

Total Time: 55 minutes.
