Product description

A long time ago in the quaint hilltop village of Sant’Elia a Pianisi, located in the Molise region of Italy, two small family businesses were born. One family operated a stone mill for crushing homegrown olives used to produce fine extra virgin olive oil. The other family gathered the durum wheat harvest, milled the wheat into semolina grain and ultimately produced fresh pasta for the local market. Over time, both families became experts at their trade, passing their knowledge to the next generation, who in turn did the same. The two families had much in common not only in perfecting time-honored production methods, but also in name. They were both Colavita families. Today, the Colavita olive oil and Colavita pasta companies are still family-owned and operating in the same town of their ancestors. They have since joined with another family-owned company, Colavita USA, and together they have shared the fruits of their respective crafts with American consumers for over twenty years. Three things make olive oil superior to vegetable oils: taste, nutrition and integrity. Taste is the most obvious difference between olive oil and the commercially popular vegetable oils such as corn, soybean and canola oils. These oils are tasteless fats. You would not want to eat a piece of bread dipped in vegetable oil; for the same basic reason, many chefs refrain from adding tasteless fat to the foods they prepare. Olive oil, especially extra virgin olive oil, adds a flavor and textural dimension lacking in other oils, making it a suitable substitute for butter and margarine in almost any recipe. Nutritionally, olive oil contains more monounsaturated fat than any of the popular vegetable oils. Extra virgin olive oils are not processed or refined. Extra virgin olive oil is essentially “fresh squeezed” from the fruit of the olive tree, without alteration of the color, taste, and nutrients or vitamins.

User questions & answers

Question: Is it 100% olive oil or does it have other oils l
Answer: I never looked but I believe it to be 100% olive oil
Question: Greetings, how much is the acidity
Answer: The extra virgin olive oil is supposed to have less than 1% of oleic acid. This version is also “first cold pressed”. I look for extra virgin and first cold pressed to buy for the most flavor. I use other types at times for cooking, but not much. You might want to review the Colavita website (and others) for this and more information.
Question: Does it come in a plastic bottle
Answer: Yes, the bottle is plastic. The oil is pretty good. :)
Question: What is its acidity
Answer: It does not taste acidic to me. It has great, rich flavor and is my favorite brand of olive oil.

User questions & answers

Question: How can you verify its 100% virgin ? just being on lable and from iitaly is not a stamp of authenticity , as a former gov, inspector i need more
Answer: You didn't say what you used to inspect to prove you are legit but I'm surprised as a "gov inspector" you don't know about CERMET certification. What is your question?
Question: Would this be good to use in soaps and lotions
Answer: You could use Extra Virgin in the production of soap and lotion; however, as I've read the cold press character of evoo will give soap a greenish color that some may find undesirable. Some suggest using plain olive oil of grade 40% less. But if a greenish hue isn't an issue with you, the grade of olive oil you choose is really immaterial. So, yes, you could use this.
Question: Is IL Duomo pure olive oil still available
Answer: Don’t think so
Question: is this good for salads
Answer: YES

The highest grade and most versatile due to the range of flavor profiles available. Virgin oil must be unrefined, have less than 0.8% free oleic acid and exhibit superior taste and aroma.

Virgin Olive Oil

Virgin olive oil is also unrefined but has a higher level of oleic acid and less bold flavor than extra virgin olive oil.

Olive oil is a blend of virgin and refine. Heat and chemicals are used in the process of extracting oil and removing flaws. Olive oil contains less than 1% of oleic acid and is a household all-purpose cooking oil.

Olive Pomace Oil

Olive pomace oil is a lesser quality. It is a blend of refined pomace oil and virgin olive oil. Its mild taste is the result of a refining process using chemicals.

Refined Oil

Refined olive oil is made from refining virgin olive oils that have a high acidity level to eliminate defects. It is generally tasteless, colorless, and has no odor.

Product description

Colavita Organic Extra Virgin olive oil is produced from organic olives grown in Italy, Greece, Spain, Portugal, Tunisia. As with all Colavita Extra Virgin olive oils, The organic is first cold pressed within twenty four hours of the harvest in a natural process that does not rely on thermal or chemical refinement. The result is the premium, unprocessed oil of the finest olives. Colavita Extra Virgin olive oil is USDA Certified 100% Organic, indicating only organically produced olives have been used in its production. User questions & answers

Question: According to the Colavita site, the Organic EVOO has a REDDISH-brown label, and is clearly marked 100% Organic. Is this one organic or not? Thank you
Answer: The one I get just says "organic", and also has the USDA Organic label on the side. The thumbnail on the left is not the organic version. I don't see it on this site. Now http://store.colavita.com/oils/extra-virgin-olive-oils/colavita-organic-extra-virgin-olive-oil-16-9-oz-glass.html has it, but the label is different from mine.I always find it tricky to locate the "organic" version: There seems to be some "versioning" going on with the labels. I spend the trouble searching as, for me, it's worth it. Hope that helps.
Question: is the 2 liter plastic bottle BPA free
Answer: It is glass.
Question: could I use this to cook with also
Answer: Yes but not at a high temperature or for a long amount of time.
Question: expiration date
Answer: Very good expiration date for the bottle I purchased. I used the entire contents well before expiration. Excellent quality by the way...I love organic olive oil.

Colavita’s Premium Olive Oils

Colavita Premium Selection Extra Virgin Olive Oil is the quintessential everyday oil which is well balanced between fruit and spice and delicate in flavor. We have sourced selections from new harvest oils to create this traditional Colavita flavor, which represents the Colavita family legacy. Imported from Italy, our Premium Selection Extra Virgin Olive Oil bears the North American Olive Oil Association (NAOOA) Quality Seal, which means it has been tested for both quality and authenticity according to the International Olive Council (IOC) standards.(Certified by IndLab on September 3, 2019)

As a trusted family company we want to ensure our customers that our products are authentic. The CERMET seal guarantees that Colavita Premium Italian Extra Virgin Olive Oil is obtained exclusively from olives harvested and pressed in Italy. (Certified by Kiwa on October 14, 1999)

Extra Virgin?

“Extra” is the highest grade for olive oil. Virgin oil may be called “extra” if it has less than 0.8% free oleic acid, and if it exhibits superior taste and aroma. Thus, the “extra” in extra virgin olive oil means “premium.”

Why Choose Extra Virgin?

Extra virgin olive oils are not processed or refined. Extra virgin olive oil is essentially “fresh squeezed” from the fruit of the olive tree, without alteration of the color, taste, and nutrients or vitamins. Because of the integrity of the product, and its antioxidant components, extra virgin olive oil will keep longer than all other vegetable oils.

Better than Butter?

Colavita olive oils can be used in place of butter or margarine in many recipes, such as on vegetables, rice, potatoes, and–yes–even baking! To try olive oil in your recipe, try our olive oil recipe converter.

Olive Oil Certification Programs

North American Olive Oil Association (NAOOA)

ONLY organization collecting samples off the shelf at the point of retail sale, which is especially important in measuring quality, which can change over time or with handling.

ONLY organization performing the full International Olive Council (IOC) tests for authenticity (i.e., purity).

Participants cannot choose the samples or where they come from.

Use highly experienced IOC testing facilities, most frequently in Italy or Spain, two of the largest olive oil producing and consuming nations in the world. (Certified by IndLab on September 3, 2019)

Olive Oil Grades

Extra Virgin Olive Oil

The highest grade and most versatile due to the range of flavor profiles available. Virgin oil must be unrefined, have less than 0.8% free oleic acid and exhibit superior taste and aroma.

Virgin Olive Oil

Virgin olive oil is also unrefined but has a higher level of oleic acid and less bold flavor than extra virgin olive oil.

Olive Oil
