Our products are from 2018 harvest and yes, we claim that our O-Live &Co is one of the freshest Extra virgin olive oils in the market, but to prove that, we place in the labels our acidity obtained during the process. The lower the acidity, the higher the quality: Ours is only 0.2% out of a maximum of 0.8%. Harvest Date has become a data that indicates when the olives were harvested, but this is not a guarantee of high quality: As an example, some producers harvest the olives but, what if they are too ripen? or What if these olives are not taken to the mill immediately once harvested? What if the olives wait in the mill a couple of days to be processed? This things currently happen and each step of the process has to be done in minimum time from harvest, and with the best olives only, to achieve a high-quality Extra virgin Olive oil. In our case? Only the best healthy olives are used in our process and we extract the oil within just a few hours, and our high quality has been proved not only through our maximum acidity of 0.2% but also during many years we had won several international contests. So Harvest Date is only information but doesn't prove the quality of your oil. Consider also that "best before" date means that you can consume our product with confidence…from the beginning until the end. Answer: You could use Extra Virgin in the production of soap and lotion; however, as I've read the cold press character of evoo will give soap a greenish color that some may find undesirable. Some suggest using plain olive oil of grade 40% less. But if a greenish hue isn't an issue with you, the grade of olive oil you choose is really immaterial. So, yes, you could use this.

Answer: The one I get just says "organic", and also has the USDA Organic label on the side. The thumbnail on the left is not the organic version. I don't see it on this site. Now http://store.colavita.com/oils/extra-virgin-olive-oils/colavita-organic-extra-virgin-olive-oil-16-9-oz-glass.html has it, but the label is different from mine.I always find it tricky to locate the "organic" version: There seems to be some "versioning" going on with the labels. I spend the trouble searching as, for me, it's worth it. Hope that helps.

Answer: Yes, this container is 3 liters. Amazon ad showing 33.8 oz. is a mistake. Young people here are not familiar with the metric system. BTW, very good product.
