Answer:	I find the moisture from fresh ginger can cause it to mold when kept in a sealed bag in the fridge (if stored for a long time). I have had no problem storing ginger without a bag or container in the fridge or on the counter. It will shrivel after a couple weeks on the counter.

Answer:	I was concerned about the "proper" preparation of this tea using Keurig technology. I was pleasantly surprised. Whereas I enjoy the ritual of preparing tea the traditional way, the Keurig method delivers a nice cup of tea in half the time.

Answer:	Not carmelized. They are roasted, as opposed to dried or sun-dried, much more moist. It simply gives them a more intense flavor, which usually makes it unnecessary to use tomato paste. I use them for making marinara, pizza sauce, most anywhere that I would use canned tomatoes. I find the crushed the most versatile. They are packed in puree, while the diced are packed in juice. They are my go-to when I can't get San Marzano tomatoes from Italy.
