User questions & answers
Question: | It’s gluten free |
Answer: | I don't know you should probably contact the manufacturer. I can tell you that it is a great seasoning package. |
Question: | Can you translate the directions for me. Mainly 1 packet per how much liquid. I translate 1 packet for 6 but no quantity for water. Thanks |
Answer: | I don't use the recipe for paella from the pack. I make my own and it serves 8 people. I use a whole pack wt 4 1/2 cups chicken stock and 1 lb of uncooked rice. Don't be afraid to use a lot...it gives a great flavor. Hope that helps! :) |
Question: | What are the spices/ingredients |
Answer: | It has paprika, saffron, salt and other spices. This is easier to use as you have all essential ingredients in one packet to make paella. |
Question: | So does anyone know how this compares with the Paellero "Valenciana" style seasoning? The ingredients are a bit different |
Answer: | In general, there are many types of Paella depending on the reagion from Spain as well as the ingredients. The paella Velenciana does not contain seafood, it is more meat based wether rabbit, chicken, chorizo, it also combines tomatoes, a type of breen peas or lima bean called judias, olive oil, saffron and paprika. Valenciana has no seafood, Paella mixta has everything and paella marinera is basically seafood based. I hope this would help you. |

Asian Cajun BBQ Shrimp with Grilled Baguette from Secrets of the Southern Table
Barbecue shrimp in New Orleans has nothing to do with a grill, a pit, or even barbecue sauce. Barbecue shrimp in New Orleans is a dish of butter-poached shrimp flavored with dried spices and herbs. It’s what happened to shrimp scampi as it traversed the Atlantic and crossed the levies of the mighty Mississippi. In the nineteenth century, trade routes opened between Sicily and New Orleans and thousands of Italians migrated to New Orleans. By 1870, New Orleans claimed the largest Italian-born population in the United States—even greater than the New York City area! A more recent immigration trend in the region has been the Vietnamese, leading to the introduction of new flavors into this Southern dish.
Directions
1. Heat a grill pan or skillet over medium-high heat. Working with a few pieces at a time, cook the bread until browned and toasted, 2 to 3 minutes. (Alternatively, heat the oven to broil and broil the bread until toasted, about 2 minutes, depending on the strength of your broiler.) Set aside and keep warm.
2. Place the shrimp in a bowl. Add the Creole seasoning and toss to coat. Melt the butter in a large skillet over medium-low heat. Add the garlic, jalapeño, ginger, and lemongrass. Cook until fragrant, 45 to 60 seconds. Add the shrimp and increase the heat to medium-high. Add the lemon juice, hot sauce, and fish sauce. Cook, turning once or twice, until the shrimp are firm and pink, 1 to 2 minutes per side. Taste and adjust for seasoning with salt and pepper.
3. Spoon the shrimp and juices atop the grilled bread. Serve immediately, with lots of napkins.

Mitica Calasparra Rice DOP is grown in one region only in Spain, known for it's unique properties when cooked, which are said to be the absolute best for Paella. Cooperatively produced in Murcia along the Mundo and Segura River valleys, Calasparra is a premium grade of Spanish rice. Granted DOP status in 1986, Calasparra is still, to this day, the only such protected rice in the European community. It needs 2 1/2 times as much water as standard Spanish rice, and it holds up very well so there is less danger of having soggy, overcooked rice. It is like Arborio to Italians. In the centuries old tradition, fresh river waters are channeled through the rice fields near the town of Calasparra, and the cooler summer climate of the area results in a slower ripening grain which is harder and slower cooking.

User questions & answers
Question: | Is this rice gluten-free and free of cross-contamination |
Answer: | Rice it's self is gluten free. But high in starch which makes sugar in your body. I don't know about the possibility of cross contamination in the processing of the rice. |
Question: | Mine has a sell-by date. No expiration date. How long is reasonable that the rice will last in cool, dark, and dry |
Answer: | Rice lasts up to 2 years stored in a cool, dry place. |
Question: | What are the directions on the ratio of rice to water |
Answer: | Do no more than 2 1/2 to 1. Please do not do the recommended 4:1 that is ridiculous and you will have soft mushy rice. Made a paella today and totally disappointed. The paella had great taste but the rice was mushy and on top of that it did not soak up the broth. |
Question: | Why would I get this particular type of rice instead of the Bomba rice I've used before? What is the difference between the two |
Answer: | This is bomba rice. It's grown in the specific region of Calasparra, which allows the rice to be called Calasparra. It's supposed to have the best soil, amount of sunshine, right elevation, etc. to grow rice. But it is basically bomba rice. |
