| Answer: | We can issue phytosanitary certificate for this LOT that shows exclusively Ceylon Cinnamon's biological species in Latin (Cinnamomum verum) issued by Sri Lankan government. Second involves chemical testing for coumarin content (Cassia cinnamon contains up to 1% coumarin, whereas Ceylon cinnamon contains only a trace, about 0.004%). Norway and Germany are recommending limiting coumarin intake (USA, not yet). Just look at the image in the food label (usually showing sticks and you should be able to clearly tell what is Cassia and what is Ceylon). Anybody consuming cinnamon daily should buy Ceylon and buy Cassia sticks, grind them and compare. Usually that experiment is deterministic for most and afterwards it is easy to distinguish between pure Ceylon and not. Issue is that Cassia tastes much stronger and is cheaper. We noticed that many reputable companies are getting negative reviews on amazon because customers are uneducated about how real Ceylon should taste/smell (not as strong as Cassia) and we also noticed that many sellers sell mostly cassia (food label says Ceylon) and are rewarded by positive reviews since it tastes stronger and smells stronger. |

We found that combination of aluminum/polymer/kraft paper is acting as an oxygen diffusion barrier and is making product stay fresh longer (oxygen would otherwise oxidize very surface-developed product (powder) relatively quickly). This is especially important with bulk 1lb packaging. Good news is that this year in Packing Expo in LV we found biodegradable polymer and have made moves already to try to implement this with our next LOT#. Time will tell if this will materialize but we do hope for the best. |
