WARNING! some cellular companies only allow Apple watches to function on their network if they sold you the watch. buy the watch on Ebay or Amazon and they wont let it connect to net work, it will still function via blue tooth using a compatible cell phone. also, when in stand alone phone mode the connection to the cellular network puts a big draw on the watch battery, it is only good for a couple hours, tethered to its I-phone it uses blue tooth and the battery can last two days.
