For example, the organized chaos of a favela in Brazil, the towering majesty of a skyscraper in New York, or the historic façades of Parisian row houses. I try to capture something that illustrates something unique about that place.

Asian Short Rib-Noodle Bowl from Instant Pot Miracle

Short ribs are ideal for the Instant Pot—whether they’re slow-cooked, as they are here—or are cooked under pressure. Either way, this tough cut turns so tender it literally falls off the bone. In this case, that’s into a flavorful broth bursting with chewy udon noodles and sweet, crisp snap peas.

Directions

Prep:

In a large nonmetal container or large resealable plastic bag combine soy sauce, beef broth, sugar, salt, garlic, ginger, sesame oil, minced green onion, and crushed red pepper. Mix until sugar dissolves. Add short ribs, pressing to fully immerse ribs in marinade. Let ribs marinate for 1 hour at room temperature or in the refrigerator overnight.

Transfer ribs and marinade to Instant Pot. Secure the lid on the pot. Open the pressure-release valve.

Cook:

Select slow cook and adjust to more. Cook for 5 to 6 hours or until meat is tender. Press cancel.

Serve:

Once cooking is complete, transfer ribs to a large bowl. Cover to keep warm. Skim the fat from the liquid in the pot. Select saute and adjust to normal. When liquid is simmering, add noodles and snap peas. Return to a simmer and cook for 4 minutes. Press cancel.

Divide noodle mixture among large, flat soup bowls. Top each serving with a short rib. If desired, sprinkle with sesame seeds and green onions.

Lemon and Pea Alfredo

Fusilli con buco is one of my favorite pasta shapes for a creamy sauce like Alfredo that coats the long curlicues, and they’re fun to eat because they can be scooped up with a fork without any twirling. This is a summery take on Alfredo, with the bright colors (and flavors) of lemon and peas and mascarpone.

Recipe

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just under al dente, 10 to 11 minutes.

Meanwhile, once you’ve added the pasta to the boiling water, heat a large straight-sided skillet over medium heat. Add the butter to the hot pan. When the butter is melted, add the garlic and cook, stirring often, until soft and fragrant, about 1 minute. Add 1⁄2 cup of water from the pasta pot and reduce the heat to low.

When the pasta is ready, transfer it to the pan with the sauce using tongs; reserve the pot of cooking water. Raise the heat to medium and sprinkle 11⁄2 cups of the Parmigiano-Reggiano onto the plain pasta. Stir with 2 wooden spoons to combine. Add the mascarpone, lemon zest, and 3⁄4 teaspoon salt. Toss well to coat, adding additional hot pasta water as needed to thin the sauce and to finish cooking the pasta. Add the peas, lemon juice, and the remaining 1 cup of Parmigiano-Reggiano. Toss well to combine, adding pasta water as needed to thin the sauce to your desired consistency; you will probably use close to 11⁄2 cups pasta water total. Sprinkle with the ground pink peppercorns and additional Parmigiano-Reggiano, if desired.

Cook’s note: Look for pasta brands such as Rustichella d’Abruzzo or Setaro.

Answer:	If you have the 07061 griddle, the cooking surface is 22 x 11.5 inches (without handles), the full griddle is 2.5 inches high, 26.25 inches long, and 11.5 inches wide. Question:	How many standard size grilled cheese can you fit on this griddle? I cook for 16 people once a week so size is a big factor
Answer:	I just measured, using a slice of bread, and you can get (snugly with no space in between sandwiches) 12 sandwiches. BUT, like anything, doing too many at once may not work. You could DEFINITELY fit 8, feed half the group you make food for and then make 8 more. It also comes with a really neat little instruction book that tells you what temperature to cook certain food at. Grilled Sandwiches get cooked at 325-350 degrees for 5-10 minutes. The griddle is 22 inches long and can accommodate a lot of food at once.
Question:	Is the non-stick surface PTFE and PFOA free
Answer:	According to Presto Customer Service the only model they have that is PTFE and PFOA is model 07115, which is a skillet versus a griddle. Here is their response "Our current model, stock number 07115, is ceramic coated and does NOT have PTFE or PFOA. All other griddles do have PTFE and PFOA."

Answer:	Open the valve for the propane tank very slowly. I kept having this issue as well. Safety feature for the propane tank.

Answer:	It comes with a coating. Don't know if it is preseasoned but food does not stick. I bought 2 of them. Last weekend cooked 5 lbs hamburger, 1 lb bacon, 3 steaks, 8 fried eggs. Nothing stuck, everything was perfect and I highly recommend the Blackstone.
Question:	When i use my grill sometimes i'll turn off the burners then back on. sometimes they turn on very low. anyone else
Answer:	Thank you for your inquiry. Our griddles have a safety feature with the regulators. If the propane was not turned off completely or in the exact steps, the regulator will prevent much gas flow from going through the regulator the next time. I have noticed that our recent batch of regulators are more sensitive than they have been in the past. You might try turning removing the propane tank and then reattaching it. This should reset the regulator from the above mentioned safety feature. Also, there are air gates at the front of each burner that can be adjusted to your preference. They control the air to gas ratio. There is a small silver screw at the front of the burner tube that you can loosen and then you can slide the gate more open or closed depending on your preference. We typically have the air gates half closed or even 3/4 of the way closed. I hope this helps. Answer:	I have chopped up everything possible you could think of......I bought it just to chop up items for stir frys, but, it works for all. My griddle fit perfectly in the bbq where the lip of the griddle was held by the grates. I bought another grill but haven't tried the griddle on there yet. If the griddle is set on the bbq, watch out that it doesn't slip while chopping or cooking.
