What makes Wagyu steaks so prized is their marbling - or fat content - Wagyu beef fat naturally has a lower melt point than commodity beef fat. So the fat will begin to soften at room temperature, and will begin to liquefy at higher room temperatures (for example if the heat of your kitchen is in the 80°F - 85°F range (or if you keep the fat next to a hot stove). If you prefer a harder fat you can refrigerate the Wagyu Tallow - or if you prefer to use it in liquid form that is fine as well. It is up to you! |
