Both portions are commonly used as a side vegetable, addition to stuffing, or in soups and stews. Cardoon must be blanched before it can be eaten. To blanch, tie the stalks up firmly and wrap with black plastic or black and white newspaper. If left unharvested, the 3-4' tall plants will produce large purple thistle-like flowers. Cardoon Seeds
Cardoon (Cynara cardunculus) are most popular in Europe where they are added to many dishes, and are gaining popularity in the U.S. plants grow 42” tall and produce thick and fleshy white stalks that can be eaten when cooked. Roots can also be used in dishes like parsnips. Stalks look similar to artichokes and have a taste similar to a mild artichoke when cooked. Sow seeds indoors in January in pots. Then thin out weak plants. Transplant seedlings after the final frost but when it is still cool. Using fertilizer helps growth significantly. Harvest after 60-75 days, leaving the base of the plant for the next season. Take leaves and thorns off and peel the stalks of their outside layer. Then fry, saute, steam, or pickle the stalks. Plants can be kept in the ground for 6-7 years, and after multiple years plants grow up to 6-8’.

This wild and untamed predecessor to the domesticated artichoke, the cardoon is a visually stunning ornamental that can be found growing as a decorative prickly weed in many parts of the United States. Native to the Mediterranean, the cardoon was first popularly domesticated for its stunning and eye-catching purple heads, then eventually hybridized into artichoke. Cardoon is related to artichokes but is cultivated for the leaves and ivory white stems which have a mild artichoke flavor when picked early. The flavor grows more bitter as it matures. Commonly used in salads, and also cooked in stews. Has a beautiful artichoke-like flower. Cardoon is a hardy perennial in zones 6-9. For early starts, begin indoors 8-10 weeks prior to final frost date. Using 4 in. pots, plant 2-3 seeds ¼ in. deep in fertile and well-drained soil. Seeds germinate in 10-21 days, thinning back to 1 plant per pot once true leaves are established. Transplant to a sunny and well-tilled spot in the garden, spaced out every 24-36 inches for maximum air flow and yields. About 500 Seeds / Oz.
