Answer:	Comes with 4 different blades all of which are for filleting I believe. I have used a couple on different species of fish and they are fantastic. I would use this knife for fish and regular kitchen knives on veggies or meat. Might be able to cut up a turkey but remember that it's a fillet knife. You can also call the mfg. Answer:	These do not need sharpening. They are sharp and ready to cut out of the box
Question:	Can these be used for wood turning/with a lathe
Answer:	No, the handles are too short and the steel too thin, even for a mini lathe. These are meant for wood carving.
Question:	Are these good for relief carving
Answer:	Depends on how big you are planning to go. I use mine for printmaking and they do great on maple plywood. 18x24 inch boards. You can get pretty detailed with these. I'd suggest these with a flexcut slip strop. Flexcut palm tools are about as good. It's nice switching back and forth to give your hands a rest ( I lose track of time and have carve 8+ hours in a day with these). Other Japanese tools break more easily and are $20 for individual tools. Biggest 'in the round ' sculpture I've worked on was a 3 foot tall eagle. Let me know if you have more questions.
