Answer: The monitor is continuous as long as you're wearing it. You'd need something to log the data - the app is setup for workouts but it might let you have a workout without a time limit. I don't know how comfortable it would be to wear 24/7 - especially when you were sleeping. In truth, a better option would likely be a heart rate enabled fitness monitor like a fit-bit (I've used both a charge 3 and a Alta-HR). I wear it 24/7 and it does exactly that. Good luck.

Answer: I have a forerunner 620 and using the HRM-Dual with that I get metrics including cadence, vertical oscillation, and ground contact time. I don't get those metrics if I'm not wearing the HRM-Dual when I run.

Answer: The heart rate strap won't connect to a phone. It will only connect to a Garmin device, such as an Edge or a Forerunner.
