I have the 4 bike version (needed for special occasions) but am currently day to day using a 2 bike configuration without the back part, works perfectly, and is slightly more comfortable, easier to park, probably save a tiny bit of fuel. 2 bolts, plus move the little reflector.

Answer:	There is no cover over the mouth piece. This is a standard type of cycling water bottle. They are designed to be quick and easy to drink from while cycling. You pull the mouthpiece up with your front teeth to drink, and them use your teeth or chin, or whatever to push the valve closed again so water does not escape, or dirt find its way in.
