I sent the product to Amazon on February 17, 2015, and Amazon requires all Sellers to make sure the expiration/best buy date is at least 90 days into the future. Although I can't answer your question specifically, I will be happy to refund your purchase if you buy the product and you believe the expiration date is too soon for you to use all of the peanut butter before it expires. Answer:	Yes, normal. I use one of the curly electric mixer blades--I think they are meant for bread dough mixing or something. I only use one on low speed. I place the jar in the sink and hold onto the jar very tightly with my left hand and the mixer in my right hand. Really hold the jar tightly or it will spin out of your hand when you turn the mixer on. Mixes in less than one minute if you move the blade around while mixing. Then into the fridge and it firms up nicely. If you like your peanut butter less moist, just pour off a little of the oil before mixing.
