13 best upright smokers
Upright smokers, also known as vertical smokers, are a type of outdoor cooking appliance designed for smoking meats, fish, and other foods. They are popular among barbecue enthusiasts and offer several advantages for slow-cooking and flavor-infusing processes. Here's what you need to know about upright smokers:
Design: Upright smokers have a tall, vertical design with multiple shelves or racks for placing food. They are typically divided into two main chambers: the firebox at the bottom and the smoking chamber above it. Heat and smoke travel vertically through the smoking chamber, surrounding the food.
Fuel Types: Upright smokers can use various types of fuels, including charcoal, wood chips, pellets, or propane. The choice of fuel can affect the flavor and cooking time of the food. Wood chips or chunks are often used to impart a distinctive smoky flavor.
Temperature Control: Many upright smokers come with built-in temperature controls, such as dampers or vents, to regulate the airflow and maintain consistent cooking temperatures. This is crucial for achieving the desired results in smoking.
Smoke Generation: Upright smokers are designed to generate a steady flow of smoke that circulates around the food, infusing it with a rich, smoky flavor. Wood chips or pellets are placed in a dedicated compartment or tray to produce the smoke.
Cooking Capacity: These smokers typically have multiple cooking racks, allowing you to smoke a variety of foods simultaneously. The vertical design optimizes space and can accommodate large cuts of meat or multiple racks of ribs, making them suitable for feeding a crowd.
Versatility: Upright smokers are versatile and can be used to smoke a wide range of foods, including brisket, pork shoulder, ribs, chicken, fish, and even vegetables. They are known for their ability to slow-cook and tenderize tough cuts of meat.
Ease of Use: Many modern upright smokers are designed with user-friendly features, such as digital temperature controllers and meat probes, which make it easier to monitor and control the cooking process. Some models even offer Wi-Fi connectivity for remote monitoring.
Maintenance: Regular maintenance is essential to keep an upright smoker in good working condition. This includes cleaning the cooking grates, emptying ash and grease trays, and occasionally seasoning the smoker to prevent rust.
Portability: Some upright smokers are designed to be portable and come with wheels or handles for easy transport. This makes them suitable for use at home or for taking on camping trips or tailgating events.
Accessories: Various accessories are available for upright smokers, including smoker boxes, additional cooking racks, and covers to protect the unit from the elements.
Upright smokers provide an enjoyable and flavorful way to prepare smoked dishes at home. When choosing one, consider factors such as cooking capacity, fuel type, temperature control options, and additional features to find the smoker that best suits your outdoor cooking needs.

User questions & answers
Question: | What is the temperature range |
Answer: | Max temp it can be set for is 275 degrees, will hold temp within a few degrees. |
Question: | Does it have a pan to add water/juice etc. during cooking |
Answer: | Yes. Water pan is large enough to smoke a long time. |
Question: | How many years of use is realistic to expect from this smoker before it breaks |
Answer: | I've had the version of this smoker (one generation earlier) for 7 or 8 years. I've kept it outside on the deck the entire time with a Masterbuilt smoker cover. I use it at least a dozen times a year and put only a modest amount of effort into care. The most important care factor is making sure it dries out after use. I wipe the gaskets but for the most part leave the interior as is (except when I cook something really messy). AFTER I finish I run it at max heat (275F) for about 30 minutes with the vent open to cook off water and bake in residual fat (seasoning). It's that baked in fat that really protects your appliance more so that any amount of elbow grease! (you see what I did there :) Results: Mostly due to failure of the smoker cover (which I have since replaced) water was able to get in. Even before that some rusting of the wood chip pan was occurring. I had a common problem with the grounding of the heating element causing electrical failures (popping my GFI) which I replaced with a significant amount of effort and several scraped knuckles. I've read that this is much easier in later models. So I'd say 10 years is reasonable given modest proper care (most important of which being to cook the inside dry after use!). And that's 10 years of freakin awesome smoked meats with almost no effort maintaining the correct heat. Turn it on, go to work, come home to BBQ. |
Question: | How often do you add wood chips? And do you soak them |
Answer: | i have time to use the unit twice, once with chips, soaked about 30 minutes, and once without. When I used chips, I added new ones about every 30-40 minutes. |

User questions & answers
Question: | can you grill with this smoker |
Answer: | Although there are some offset smokers that are designed to allow grilling on the offset box directly over the coals, this one is not that way, smoker only. |
Question: | need exact dimensions. width - just smoker and wood box - no legs / height of vertical smoker and wood box |
Answer: | Smoker is 36"X16". Wood box is 14"X12.5". Both are 15" deep. This smoker did an amazing job on a batch of fish I recently did. No lack of smoke from this one. |
Question: | What gage is the steel |
Answer: | Is the steel strong enough for it not to start burning out or Rust |
Question: | if i used wood but it runs on charcoal wouldnt the charcoal over power the taste of the wood |
Answer: | My opinion is just turned around from these others, in that once meat reaches a certain temp, usually within about two hours, it will not add any more smoke flavor. Depending on what type of wood your using, hickory being one, you will give your meat a bitter taste. So after using your favorite wood initially then I will switch over to only charcoal if I'm using my Weber or a white oak wood that is very mild to finish it up. Nothing like smoking meat for 8-10 hours and have it taste bitter and over powering. Perfect smoked meat every time for me is charcoal on the Weber with the soak wood chunks for the first two hours and nothing but just plain charcoal the rest. I buy the Kingsford charcoal on memorial and labor day when there two for one. Generally a 5lb bag of chunks will last me nearly a year. So these guys spending $100 to smoke what only cost me about $10 per session. Get the pork butt to 190 degrees, wrap it in heavy duty foil and let it go another 30-45 minutes wrapped, pulled pork every time. Follow these instructions and I'd put your meat against anybody's taste wise... and enjoy the compliments! |

User questions & answers
Question: | Is the 18 inch easy to pack up and carry on camping trips |
Answer: | Probably not, depends on what you are packing it into. Camper maybe, not so much in a car. It stands 43" tall, so even if it is broken down to the main components you'll have 3 pieces 18" round. |
Question: | Is a chimney starter necessary or can one just use charcoal lighter fluid |
Answer: | Lighter fluid is fine if you use a fire source which gets easily to the charcoal deep in the barrel. Sturdy wooden matches are suggested. I recommend a chimney starter. They are an incredible investment which will provide two advantages: no petroleum scent to your grilled meal and a whopping savings of cash for charcoal. One of my chimney starters is now 26 years in service |
Question: | Does the charcoal go in a pan or on a rack? If on a rack, where do the ashes go |
Answer: | The bottom of this cooker has a wire rack inside of it where the charcoal is placed on but I guess you don't have to use the rack if you don't want to, and the ashes just collect at the bottom under the rack which you can easily dump out after a few uses. |
Question: | Is there a cover made for this smoker that I can purchase as well |
Answer: | Yes. It is model number cgc-10118. This is available on Amazon of course. |

User questions & answers
Question: | can you use reg, charcoal in these |
Answer: | No, it’s made for only pellets. Charcoal wouldn’t even fit. |
Question: | No water pan? does it dry the meat out |
Answer: | It has a water pan. We recently smoked a brisket in ours. Delicious! |
Question: | What’s the purpose of the purger at the bottom to empty pellets? Doesn’t it automatically feed the pellets from the hopper into the smoker |
Answer: | Actually, I use different pellets for different meats. So the purger is for the moment you really want to experiment with “best flavor for particular meats”! |
Question: | Currently i can smoke 8 butts in my masterbuilt but time to replace it . Will this hold 8 to 10 butts |
Answer: | Yes i have fit 8 large butts in mine. You will have to put a pan with a wider catch surface in it though. The catch pan that comes with it is odd shaped and misses catching alot of drippings that lead to the occasional flare up |

Question: | How would you compare the performance between 14.5 an 18.5? same amount of charcoal? same amount of time to cook? any diff in temp control |
Answer: | Have used the 14.5 a few times now (tri-tip, meatloaf, two hot-n-fast cooks with pork butts)...It's a pretty cool little cooker. Have several years experience cooking with a tamale steamer converted smokey joe. Thus far, I'd have to say it cooks similarly to those (with the added bonus of a water pan and door). It holds less charcoal than the 18.5, for sure. For the hot-n-fast pork butt cooks I had to lift off top/center sections and refuel...not too difficult, but something I don't have to do with the 18.5. Haven't really tried a true low-n-slow cook yet...can't say how long cook time might be under those conditions (have had good 6 hour plus burn times on the converted smokey joes). When I cook hot-n-fast, to be honest, I just let 'er rip...this little guy gets plenty hot, plenty fast. Obviously, there's less space in the 14.5, you can get a butt on each grate and that's about it. I don't use water when cooking hot-n-fast either, but the water pan is much smaller than the 18.5. I think I'm going to enjoy cooking on this, but If I had to choose one...I might choose the 18.5 (increased charcoal/cooking capacity). Lucky me, I've got both and a couple of 22.5's!! Hope this helps. |
Question: | Am struggling with which size Weber Smokey Mountain Cooker to get - 18.5 inch or 22.5 inch. Can you tell me the advantages to both. Thank you |
Answer: | I have owned the 22.5" for a year and I can tell you that it is worth the purchase. It can hold any piece of meat that you can think of putting on it and it stays fired up for all smoke jobs. I have smoked whole turkeys, briskets, pork butts, chicken, and burgers/brats/dogs. I would say I've put roughly 25 smokes on it and I have never had any issues with it. I also smoke for 4 people generally. The 18.5" is going to be exactly the same thing except in a smaller form. It may not have the room you are looking for if you get a large cut. I have seen a lot of comments saying that the 22.5" uses more fuel and while that is correct it doesn't have to be filled to the brim for a smoke. I normally use a half ring and if I need a few more coals I just throw them on. Never had an issue with it. I would rather have the size and not need it than regret not getting the extra room. If this is well taken care of it could last for several decades so what is the big deal with spending an extra $100. Just my 2 cents. |
Question: | What is the country of orgin for this Smoker |
Answer: | 8th best country in the world! The United States. |

User questions & answers
Question: | The lowest temp I got with knob set at low, with no water and empty in the smoking chamber is 235 degrees. Without water, what temps did you get |
Answer: | Used mine once. With water in one tray, on low, in full sun, ran at 200°. |
Question: | The extra tray for water where do you put it on the lower rack or where the other tray is first time doing this |
Answer: | I put it on the lowest rack accessible from the upper door. |
Question: | Can the racks be removed and meats hung? Does it have a hanging ring in top |
Answer: | The racks can be moved and removed. I've not seen any hanging hooks or rings on which hooks might be hanged. |
Question: | How long will a propane tank last with this one |
Answer: | I came up with a crude way to estimate how much fuel I have used thus far. Propane weighs about 4.24 pounds per gallon. The tank weight is about 17 pounds. I have run my new smoker for about 12 hours so far and have used about 4 pounds, and have about 9 pounds remaining, so that rounds out to be about .33 pounds per hour, and my smoker was set at the lowest flame setting. So I have about 27 hours remaining in the tank.A word of caution about tank exchanges! I had to exchange tanks because mine was too old, so I exchanged 2 tanks. Upon weighing each, I found that there was only 13 pounds of fuel in each tank. So, keep that in mind if you use the exchange program. When you refill a tank, you should end up with about 20 pounds of fuel +/-, so it is pretty obvious that while the exchange program is often more convenient than going to a refill station, you will get more fuel, and longer use out of a tank that you have had refilled at a fill station.I used a bathroom scale, so my results are not perfect, but should give you an idea of what to expect. |

User questions & answers
Question: | Are there separate trays for chips, water and drip pan? Three trays total |
Answer: | There is a "chip pan" and "water/drip pan" and a separate drip pan on the bottom of the unit, below the burner. The water pan catches most of the drippings and that's why I call it a water/drip pan. |
Question: | How long does the wood last in the tray |
Answer: | Depending on your temperature the wood chips will last any where from 1 hour to a 1 1/2 hours. |
Question: | does the smoker tray pull out easily after the unit is heated up |
Answer: | It pulls out VERY easy. |
Question: | Can this be used as a grill and or for baking |
Answer: | Not mine and I feel that the 'Pit boss' has misled us with statements and pics stating that it CAN be used as an oven for baking pizzas, breads etc in pics where my new 77435 won't get above 310f [empty]. I'm currently trying to adjust the air intake valve to get a decent flame, but I doubt even with a perfect blue flame and slightly yellow flame tips would achieve a decent bake temp. They do state that the 77435 burner is rated at 13,000 BTU, which is kinda low to begin with. But it does make a great long slow low temp smoker........... |

User questions & answers
Question: | Are you able to hang meat vertically |
Answer: | I doubt it will work. The rod itself would be fine, but the "grabber" on the end would not fit in the crack. Try a dowel rod with plastic glue on the end. |
Question: | This or big easy grill |
Answer: | Yes |
Question: | What’s the largest size brisket or Boston Butt can be used on the 16inch version |
Answer: | I would think so. I used it to get a toothbrush stuck in the sink drain |

Answer: | This smoker includes the pictured legs. |
Question: | Can the door be reversed |
Answer: | The door on this smoker is not designed to be reversed. |
Question: | how many rack does it have |
Answer: | i kneed to order 2 racks and 1 back leg who can i call?????? |
Question: | I'm new to smoking and need something for indoor use. Can this be used indoors |
Answer: | No. The smoke and other invisible fumes (carbon monoxide) are not safe to breathe. This needs to be used outdoors. If the seal around the door was improved, you could maybe justify using it in a garage with some duct work attached to the vent in the back and routed safely outside. Do not use this in an area intended for continuous occupancy. Do not use it near anything flammable or combustible. |
