Answer: | Scratching happens when a HARDER object is applied to a SOFTER object. There is glass and there is glass and there is steel and there is steel. Stainless is an alloy; it has nothing to do with hardness. Hardness comes from the way the steel is treated and brought to a certain hardness. Hardness has its advantages and disadvantages. The harder a blade the sharper is can be made AND kept sharp if it is CUTTING. But, the disadvantage... the harder it steel, the more brittle it is and can easily crack and break. So, manufacturers make the stainless steel for uses that warrant staining and want or care to keep the stains off, such as kitchen knives. Nobody in their right mind would use SS for a blade that is to be discarded quickly. SS is expensive comparing to carbon steel. ANY steel has carbon in it. SS has also about 11% or more Chromium which is costly. Most glasses are scratch-able by a snap-break utility blade. Lastly, the best surface to use as a mat to cut on is NOT a very hard surface. A mat costs less in the long run vs. a hard glass that dulls the blades. |
