12 ounces mozzarella cheese, grated or cut into 8 slices
8 slices brioche bread
Pesto
1 cup dry-packed
sun-dried tomatoes
¼ cup fresh basil leaves
4 cloves garlic, coarsely chopped
¼ cup candied walnuts
¼ cup grated Parmesan cheese
½ cup olive oil
8 slices heirloom tomato
4 tablespoons unsalted butter, for finishing
