| Answer: | Both is the simple answer. There is a pulse button that allows you to control the vacuum and stop it at any point and then press the seal button. There is also a "start" button that does the whole process automatically. You will NOT want to use the auto process on berries or things that can be easily crushed as this sealer does a great job of vacuuming out all the air and squishing soft stuff if you are not careful. Also, for liquid products, such as pasta sauce, you will want to use the pulse button to control the vacuum to keep the liquid from being sucked into the vacuum chamber and mess with the seal.
