Takes a few tries to optimize roti-making (watch YouTube videos, they help to hone in the skills); I can now make rotis much quicker and easier (more like in one-fourth of the time compared to end-to-end manual operation, from raw flour to rotis). This appliance can and will make good rotis once you master the skills required. FIRST USE OF YOUR FLATBREAD MAKER

When using your flatbread maker for the first time, you may notice some slight smoking or odor. This is normal with many heating appliances and will not recur. This does not affect the safety of your appliance. Also it is recommended that you discard the first two flatbreads from your new baker.

As far as I am concerned tortilla maker needs to be from Mexico since they know what its supposed to do. This is great quality and very nice and heavy duty. You will love it. Answer:	I suppose you could use it as a press, but it is designed to press-and-cook in one, simple step. Very nice machine. There's a little learning curve to get the right texture dough balls, but after that, it's a lovely result.

Answer:	It most certainly will work for gluten free tortillas.The design is flawed and it breaks right away ... that's the problem I had with it. You can't use the large handle to press the tortilla like a tortilla press is designed to do. If you do use the handle to press out the tortilla the body housing cracks where the on/off light is ... where the handle goes in. I see others saying you have to use the corners to press down. You'd have to have super human strength in your hands to press by the little corners hard enough to flatten a tortilla. It's not possible. Oh ... and I did flatten them as much as I could by hand before I used the tortilla maker.If you add xanthan gum to your mix it will work just fine. Also add sweet, or glutinous, rice flour to your flour mix and it will be even more pliable. I made a couple of batches of GF tortillas that turned out great until the appliance broke.I use a mixture of white rice flour, brown rice flour, sweet rice flour, cornstarch and xanthan gum ... and of course the other ingredients your recipe calls for like baking powder or whatever.

Ready to make your own, natural and fresh tortillas?

Start by making your masa dough according to the instructions on the package. For this example, we'll use Maseca: just mix 2 cups of Maseca, 1.25 cups of water, and a pinch of salt. Mix the dough until it has the consistency of Play Dough. Once ready, separate the dough into 16 small balls about 1.25 inch wide.

Setting up the plates

Pro tip! Cut a zip-top disposable plastic bag along the corners to make two square plastic sheets (usually the sandwich size is perfect). Place one of the plastic sheets on the bottom plate. Place a ball of dough slightly off-center, towards the closing hinge. Place the second plastic square on top. *(If you do not have zip-top bags, cling wrap or parchment paper can work too).

Press!

Close the top plate. The weight of the plate will help you press down, and the lever will help you finish the press firmly. Not too much force is necessary.

Peel and separate

Open the press, place the plastic covered tortilla on one hand, & peel off the top plastic with the other hand. Flip the tortilla over onto your other hand and now peel back the second plastic square. You can start putting your pressed tortillas directly on a hot griddle, or on a plate separated with sheets of parchment paper if you prefer to cook or freeze them later.
