Question: Has anyone left the sugar out (or only used a couple of tablespoons)? How does the amount of sugar affect the texture of the finished product
Answer: Short answer: no. Dissolved solids are what suppress the freezing point and sugars are your primary source of these. You can reduce sugars by substituting some other solids, like nonfat dry milk (make sure to get 100% skim milk solids). Is your goal reducing sweetness or reducing caloric sugar? If the former, change the sugars you use. Use a mix of dextrose (pure glucose) and table sugar. Dextrose is only 70% as sweet but has nearly double the freezing point suppression. If you want sweetness but no the sugar calories, a portion of the sugar can be replaced by non-digestible sugar alcohols. I'd recommend erythritol. But be careful; if you consume too much it can cause digestive discomfort. And it doesn't taste 100% like sugar. I wouldn't substitute more than 60% of the sugar or so.

Answer: Absolutely you can. And like Calvin said, the less ice cream you make the faster it freezes. I have had mine for over a year now and it continues to work flawlessly. Excellent product.

Answer: I bought this machine at an estate sale for $15. It looked like it had never been used. I just pulled it out after about 3 months. With no experience at all having made ice cream I watched some YouTube videos and decided on a custard base (made with egg yolks). I pour straight into the machine hot from the stove and in about an hour and 20 minutes I have soft serve ice cream. It’s the best I’ve ever had. The machine is a dream! It’s SOOOOO. Easy to use AND addictive! My first day I made 3 quarts of frozen custard. I don’t think I’ll ever buy ice cream at the store again.

It is sad indeed that I have to go to other online retailers to figure out the current retail price vs what Amazon calculates it to be to raise the % to make it look like a steal....and after seeing that I am only getting like $4 off of a high priced item, then most daily deals that grab my attention go ignored after calculating the tax vs. Eb @i which still doesn't charge tax. It reminds me of a store that opened up about 10 years ago at the mall. They sold made in china houshold furniture that looked nice. They would have a cheap made wooden chair with a ticket price of $499 but since the store was always at a "closing sale" then you could get everything on the store at a whopping 75% off! That store had a closing sale till it did close about 8 years later.

Answer: YES! I had 3! I gave them a try over and over and for each time it would not start I found a different reason! One would not start bec. there was a motor lock, then the lid would not lock into its place and with the other, when the lid lock in the lid could not be unlocked and the motor would not start! as much as I loved it (obviously I have them 4 tries - the first one broke down after 6 months)...and after that it was one big adventure into the land Oster! I complained about everything but they just deny that "anything" could be wrong, though they are willing to replace the ones they do not work! NO_they do not care. I told them OSTER might in the old days cared to bring its costumers quality products, NOW ITS just like ALL THE OTHER GREED driven Companies behind the Product where it is not about the costumers and quality! ITS ALL ABOUT the $, but they do not care. I bought a Hamilton Beach mini chopper and so far it does the job. I suggest this: return the one you have, get your money back and invest into that into the "Krups Mini Chopper" sold by cutleryandmore.com...or get one from cuisinart mini-prep...that is what I am going to do. as a matter of fact, I will get one just case the hamilton beach one will give up. Forgive me for being so lengthy about this, but I have had small choppers ever since they came out and, when they lasted! NOW I seem to have to buy 2 per year and that is very upsetting. I love those things and I do not want to be without one. But you see, I am from the old school where companies cared for their costumers more then for the $, where they cared about us and having to face the reality that quality matters no more and we, the paying costumers do not count is for me very upsetting. I gave Oster plenty of tries with the thought I might just have a bad product made on a bad day! NO! THAT IS NOT SO! Please do not be upset with me! When I told oster how I really felt about their lack of concern for the costumers its is people like you and me that get ripped off and are lied to by someone making promises they cannot keep.
