Answer: I have only use the 902 model, but I believe the 987 is supposed to have a stronger motor.

Answer: I purchased the 901 for my family and have given the 902 as gifts. The only difference I see is the accessories which are included with the 901. The machines themselves are pretty much the same. I haven't used any of the accessories that came with mine, i.e. the containers to make frozen pops. We use our Yonana machine several times a week. We love it. The fruit treat is just too darn good! You know you have to be cheating on any diet, but it is just fruit! Love it!
Question: Mine always seems to come out in two lines with frosted icy bananas. It isn't very pleasant. Is there something I am doing wrong
Answer: The problem is two-fold. First, the instructions and video tell you to put large chunks of banana in, alternately with small pieces of other fruit. But what it should be telling you is to chop the banana into smaller pieces (I like 1/4" to 1/2" lengths) before freezing them, and alternating small pieces of banana with other fruit. Secondly, no all videos tell you to let the mixture sit a few minutes, stirring a little, before serving. That's how you get the soft-serve texture. To get that soft-serve swirl you'll need to put the softened mixture into a pastry bag and feed out with a large tip. So the perfect soft-serve sorbet can be achieved, but they neglect to tell you exactly how. I only found out by searching for how-to videos on YouTube.

Answer: I bought the Tovolo Ice cream tubs and they are very sturdy with a removable inner plastic liner for easy cleaning. The large bowl itself that fits inside the machine is not supposed to have ice cream frozen in it because it can damage it. I leave the empty bowl in my freezer until I'm ready to make a batch and then empty the contents into a Tovolo tub. I looked at other tubs but this brand seemed to have the best reviews, was reusable, and decent in price. They fit about 1.5 quarts and I have a little extra in the machine that I either eat or just put in a small Tupperware dish. I know you can go directly on the Cuisinart website if you need any part numbers for a specific model. I did see extra bowls for the machine on their site and on amazon. Just get your model number for your machine and type that in the search box.

Answer: NO, NO, NO....I bought one of these 4 days ago at a local retailer. It says made in USA all over the box. Before I bought it, I called the number on the website, and asked the customer support person where it was made. She told me that the parts are made in the USA, but they are assembled in Mexico. I was looking for an AMERICAN MADE, AMERICAN BUILT unit, but I was under a time crunch. Reluctantly, I bought it. I opened the box, and the first thing I saw was a sticker on the motor that said made in china, plain as day. I used this thing one time. It did work, and made ice cream as advertised, but after washing it, drying the parts, and putting it away, I looked at it again 2 days later, and the metal mechanism that the paddles attach to were rusting!! Are you kidding me?? $270.00 for one batch of ice cream! What a bargain. Needless to say I returned it today. Their own company doesn't even know where their products are made!! If it seems like I am upset, I am. Nothing is made in the USA anymore, and quality suffers tremendously. By the way, all the inside metal parts are plated, not stainless steel like they should be. The only thing I saw that was stainless was the actual cylinder. Don't waste your money. If anyone out there knows of a truly American made and American built ice cream maker, please tell us on here.

Question: For the hand crank (not the electric) attachment, are the gears all metal or are they plastic
Answer: I believe they are a combination of both. Only the very old White Mountain hand crank ones were all metal gears. The plastic ones today, make it easier to crank, due to less friction, but are less sturdy of course.
Question: Does the motor stop automatically when done
Answer: NO! The motor will slow down, and turn very slowly, so you have to keep your ears tuned to the mixer. Once it slows, and stop from the ice cream being thick, you need to unplug as soon as possible or you could burn up your motor. Nothing to fear, just keep an ear and an eye on it, so when it slows or stops, then unplug immediately. But it does not stop on it's own, like a sensor, or automatic shutoff switch would do. This is still old school technology.

Answer: Just read and review booklet instructions and it states the bowl and not the paddle turns. I also thought I had a defective ice cream machine until I re-read directions. Question: Has anyone left the sugar out (or only used a couple of tablespoons)? How does the amount of sugar affect the texture of the finished product
Answer: Short answer: no. Dissolved solids are what suppress the freezing point and sugars are your primary source of these. You can reduce sugars by substituting some other solids, like nonfat dry milk (make sure to get 100% skim milk solids). Is your goal reducing sweetness or reducing caloric sugar? If the former, change the sugars you use. Use a mix of dextrose (pure glucose) and table sugar. Dextrose is only 70% as sweet but has nearly double the freezing point suppression. If you want sweetness but no the sugar calories, a portion of the sugar can be replaced by non-digestible sugar alcohols. I'd recommend erythritol. But be careful; if you consume too much it can cause digestive discomfort. And it doesn't taste 100% like sugar. I wouldn't substitute more than 60% of the sugar or so.

Answer: I bought this machine at an estate sale for $15. It looked like it had never been used. I just pulled it out after about 3 months. With no experience at all having made ice cream I watched some YouTube videos and decided on a custard base (made with egg yolks). I pour straight into the machine hot from the stove and in about an hour and 20 minutes I have soft serve ice cream. It’s the best I’ve ever had. The machine is a dream! It’s SOOOOO. Easy to use AND addictive! My first day I made 3 quarts of frozen custard. I don’t think I’ll ever buy ice cream at the store again.

Answer: Yup, I agree. It is sad indeed that I have to go to other online retailers to figure out the current retail price vs what Amazon calculates it to be to raise the % to make it look like a steal....and after seeing that I am only getting like $4 off of a high priced item, then most daily deals that grab my attention go ignored after calculating the tax vs. Eb @i which still doesn't charge tax. It reminds me of a store that opened up about 10 years ago at the mall. They sold made in china houshold furniture that looked nice. They would have a cheap made wooden chair with a ticket price of $499 but since the store was always at a "closing sale" then you could get everything on the store at a whopping 75% off! That store had a closing sale till it did close about 8 years later.

Question: Why won't my lid stay on
Answer: Because the plastic dasher/paddle gets warped (at first I thought it was from washing the paddle in the dishwasher, but I'm on my second machine after maybe five years and washing it in hot water after using it seems to have done the same thing so perhaps it's just from use) and so it doesn't revolve "flatly" in the circular groove in the clear plastic cover when it's placed on top. I find that eventually it seems to settle down and revolve evenly without any wobbling, so to speak. Rather than use tape, I've used a small but heavy pan with a base a bit larger than the top of the machine set on top of the clear plastic cover until it's revolving evenly - maybe the first five minutes of use. Other than that, and the need to use a hard - but not too hard: it has to have some flex - plastic utensil to remove the last of the frozen ice cream from the interior bottom and sides of the freezer bowl because it's made of aluminum and scratches incredibly easily, it's a terrific unit.
Question: my machine will not freeze the mixture after the tub in freezer for a week. its like cold milk with some ice. two different batches same results.Why
Answer: Quality ice cream from plain milk?? no way! I use half and half along with heavy cream and get the most delicious ice cream you can imagine! and in only 25 minutes. Also turn your freezer down. If your freezer is empty it may not even go to zero degrees! I clean and rinse the tub quickly and return it to the freezer quickly. Its still mostly frozen when I put it back in and only takes 2-3 hours to refreeze completely! I bought a second tub but never need to use it! This thing has worked perfectly for me and everyone loves my ice cream! The secret is in the better ingredients. more costly yes...but sooo worth it! My recipe: 3cups of half and half. 2cups of heavy cream. 1&1/2 cups of C&H sugar dissolved in the cream. 2 table spoons of imitation vanilla. 1 tiny pinch of salt. Try you will love it! Please don't order a round steak and expect a filet mignon. life does not happen that way. ENJOY!

Question: Will this machine make half batches
Answer: I have never tried to make a half batch. I have made batches less than a full batch and it worked fine. Breville only wants you to use 3-1/2 cups of liquid so a full batch is only a little over a quart anyway. Most of the recipes in the gelato/ice cream books are just about right for this machine - about 3-1/2 cups of liquid. I suspect most of the machines on the market are about the same.
Question: Can the ice cream really come out firm on the hardest level? I hate soft serve and like firm scoops
Answer: It will not be firm like what you have out of your freezer. It will be more like soft serve, you need to put it in your freezer for a bit after it is done. But really, that's the way all ice cream is, even what you get in a creamery. I actually returned this unit and bought a Cuisnart instead. I wasn't pleased with the paddle on this unit. It seemed very flimsy and when the ice cream got thicker had a hard time stirring. At one point it even stopped stirring and burned up the bearings. They replaced it for me at no charge but by that point I had already decided to change brands. If you look at it and compare to the Cuisnart you will see what I mean, the paddle just needs a little reinforcement IMO.
Question: Hello , I am quiet not able to decide between Breville and Cusinart ICE100, also my concern is does 12 hardness settings actually work as described
Answer: I love my Breville. The consistency settings range between sorbet, frozen yogurt, gelato, and ice cream (softer to harder). I think the settings work, but I like to make ice cream, so I now just keep it on the hardest setting. That setting will give you the consistency of something near a soft serve. One of the reasons I chose this one over the Cuisinart ICE100 is that it has the "auto" setting. You cannot always gauge how long it will take when using different bases and styles of ice cream (this one has both options). Additionally, you can set it to make a sound when it is time for mix-ins and when it is ready. Also, it has the "pre-cool" feature (which I love!) that will get the temperature right before adding the mix (I compare it to pre-heating an oven). Finally, the "keep cool" function REALLY comes in handy (if you have used the freezer bowl types, you know that time is of the essence once it is done!) I'm glad I went with this one. P.S. I HIGHLY recommend using Sweet Bliss containers to store your ice cream. They are the best I have found or seen anywhere for storage, and you can write on them w/ a Sharpie. Answer: Very Easy to use. Bought this one as a wedding present and they love it and also stated that it was easy to use. This is my second purchase for this model.
Question: Can you make sherbets and sorbets with this ice cream maker
Answer: Hello Catherine, Yes, the recipe book that came with the ice cream maker has recipes for sherbet and sorbet. I have used other recipes other than the ones in the book that it came with and they worked fine. I would think that any ice cream maker would be able to make any frozen desserts. There are also recipes for frozen yogurt.
Question: DOes it come with a cap to cover the container while its in the freezer
Answer: I find it best to put the leftovers in 16oz plastic containers or what size you want. It keeps for a few weeks that way.
Question: how do you use it
Answer: Put the mixture in the metal container and close it. Be sure the dasher/beater is in it. Hook up the motor. Start machine. Pack in layers with ice, then rock salt (1st layer goes up approx. 1/3 the height of the container), then more ice and more rock salt and continue on until you have layered up to the top. The machine should be running while you are doing this. Keep adding more ice and rock salt as it melts until the churning slows down and stops due to the thickness of the ice cream. The ice cream will be soft and should sit for a few minutes before the dasher is removed from the container. Remove the container from the ice and salt surrounding it. Freeze overnight if possible as the ice cream will harden as it freezes. Adding rennet to your ice cream mixture will insure a more solid texture but this depends on the recipe, and it is optional. Enjoy your machine. Hint: If you are using Vanilla, Mexican Vanilla will add a slightly coconut taste to some recipes....we love it and prefer the Mexican Vanilla.

Answer: My ice cream canister is seamless, made of aluminum; the wooden bucket has a plastic liner so that you don't have to worry about a leaky wooden bucket.

Answer: Rinse it out after each use with cold water. Make sure all salt is out of bottom. Rub lindseed oil on the outside (only) of bucket at leaste once a year, depending on how often you use it. I make a bactch each month.
