Allow the machine to churn and freeze the mixture for the specified time.
Once the ice cream reaches the desired consistency, transfer it to a container and freeze it further if needed.

User questions & answers
Question: | Can I use a canister from the 5200 model in the 5210 model |
Answer: | I don't know for sure. You can place the 5200 in the 5210 and see if it fits. You can also contact Deni and ask. They do answer. |
Question: | Does this require ice & dry ice |
Answer: | No it does not require any ice. The canister has a liquid inside it which freezes. This is what freezes the ice cream or Italian ice or whatever. |
Question: | Where can I get an instruction manual. bought one at a garage sale, looks brand new |
Answer: | I just did a quick Google search, here is the first one I found:http://kitchen.manualsonline.com/manuals/mfg/deni/5210.html?p=1 |
Question: | How much ice cream does it make |
Answer: | Based on the Tupperware we put it in for the freezer, approx 8 cups. We had a group of friends over for Memorial Day and were able to serve everyone (16 ppl) 1 scoop each on top of their brownies. If you want it for ice cream, I highly highly suggest making it the day before and storing in a container in the freezer to get the good hard freeze. |
Product description
Whether you crave an indulgence of rich chocolate ice cream, a light and frosty raspberry freeze, or a batch of frozen margaritas, this frozen dessert maker is ready to mix and freeze 1-1/2 quarts of your favorite treat at a moment's notice. The canister requires a minimum of 8 hours to freeze but dessert fans can store it in the freezer at all times for making spur-of-the-moment frozen treats. The patented canister has walls that are liquid-filled for even freezing and double insulated to keep the bowl colder for a longer period of time. When ingredients are ready, the stir paddle goes inside the canister and the plastic lid locks onto the canister. The lid is clear for checking that desserts reach the proper custard-like thickness and has an opening for easily adding chunky ingredients, such as chocolate chips or cookie dough, toward the end of processing. The powerful 38-watt motor fits onto the lid and the power switch starts the action. With the ice cream maker running, cooks pour their mixed recipes through the top of the lid and wait anywhere from 10 to 20 minutes for the ingredients to reach the proper consistency. The compact unit doesn't take up much counter space and, unlike more complicated ice cream makers, doesn't require hand cranking and needs no salt or ice in its recipes. This appliance comes with a book of 40 recipes and is covered by a one-year limited warranty. --Cristina Vaamonde

Product description
This automatic ice cream maker produces 1-1/2 quarts, or 10 servings, of premium ice cream right from home faster than it takes to go out and get a cone from the local ice cream parlor. For ice cream, sorbet, flavored ice, or frozen drinks at the spur of the moment, dessert fans can store the 5400's canister in the freezer at all times; otherwise, the canister requires a minimum of 8 hours to freeze. The patented canister has walls that are liquid-filled for even freezing and double insulated to keep the bowl colder for a longer period of time. When ingredients are ready, the canister rests on the high-powered 62-watt motor base and the stir paddle fits inside the canister. The plastic lid locks over the canister and is clear for easily checking that desserts reach the proper custard-like thickness.
With the ice cream maker running, cooks pour their mixed recipes through the top of the lid and wait anywhere from 5 to 30 minutes for the ingredients to reach the proper consistency. The digital controls include a power button and a timer that sets in 5-minute intervals. The timer emits a warning sound when the ice maker has three minutes to go and sounds again when the set time has elapsed. Anti-slip rubber feet keep the maker from moving across the counter during mixing. This appliance comes with a book of 30 recipes and is covered by a one-year limited warranty. --Cristina Vaamonde

User questions & answers
Question: | is the mixing paddle supposed to turn? mine doesn't seem to do that, just the container turns |
Answer: | Just read and review booklet instructions and it states the bowl and not the paddle turns. I also thought I had a defective ice cream machine until I re-read directions. Cuisinart should really print in boldface this fact. Would definitely save much aggravation. I love my Cuisinart ice cream machine !!! |
Question: | does this make good yogurt |
Answer: | I make frozen yogurt with this every week, and my recipe is SO easy: 1 quart VANILLA (not plain) yogurt, 1 pkg thawed frozen cherries (or berries of any type). No salt, no sugar, no milk, no nothin' else. Turn it on for 20 minutes and you're done. Yummy frozen yogurt. Other favorite flavors, always beginning with VANILLA yogurt: 1) coconut and chopped pecans; 2) 1/2 cup of mini chocolate chips |
Question: | Can I make ice cream using this machine without eggs?, and does the maker come with a recipe book |
Answer: | I stopped using eggs because for some reason, the ice cream would freeze too hard. I now use: 1 cup cream, 2 cup half-and-half, 3/4 cup sugar, 1 teaspoon vanilla, 1 teaspoon vodka (helps the freezing), pinch of salt, pinch of cinnamon. It's great. |
Question: | As soon as my ice cream maker is full it continually roams around the counter what's up with that |
Answer: | That sometimes happens due to having an extremely flat surface and moisture condensation buildup underneath the ice cream maker. It's science not magic. |

User questions & answers
Question: | Can this device make yogurt |
Answer: | The description says that it can make frozen yogurt - to just use the ice cream setting. Cook's has a delicious recipe for frozen ginger yogurt, including instructions on how to keep it from tasting chalky or being too "icy". |
Question: | Can I purchase extra bowls to freeze in refrigerator and if so, where do I go or what is the part number on Amazon to acquire them |
Answer: | I bought the Tovolo Ice cream tubs and they are very sturdy with a removable inner plastic liner for easy cleaning. The large bowl itself that fits inside the machine is not supposed to have ice cream frozen in it because it can damage it. I leave the empty bowl in my freezer until I'm ready to make a batch and then empty the contents into a Tovolo tub. I looked at other tubs but this brand seemed to have the best reviews, was reusable, and decent in price. They fit about 1.5 quarts and I have a little extra in the machine that I either eat or just put in a small Tupperware dish. I know you can go directly on the Cuisinart website if you need any part numbers for a specific model. I did see extra bowls for the machine on their site and on amazon. Just get your model number for your machine and type that in the search box. |
Question: | Does anyone know how this compares to the ICE-60W model |
Answer: | The ICE-70 is a step up from the ICE-60W model -- it has an auto count-down feature. I chose the ICE-70 over any other model based on this article on the Best Ice Cream makers: http://bit.ly/1TClJZl. |
Question: | Has anyone tried making Gelato? How does it turn out |
Answer: | Gelato turns out very good. My wife tried a few different variations of coffee flavored gelato and we were happy every single time. |

User questions & answers
Question: | Why won't my lid stay on |
Answer: | Because the plastic dasher/paddle gets warped (at first I thought it was from washing the paddle in the dishwasher, but I'm on my second machine after maybe five years and washing it in hot water after using it seems to have done the same thing so perhaps it's just from use) and so it doesn't revolve "flatly" in the circular groove in the clear plastic cover when it's placed on top. I find that eventually it seems to settle down and revolve evenly without any wobbling, so to speak. Rather than use tape, I've used a small but heavy pan with a base a bit larger than the top of the machine set on top of the clear plastic cover until it's revolving evenly - maybe the first five minutes of use. Other than that, and the need to use a hard - but not too hard: it has to have some flex - plastic utensil to remove the last of the frozen ice cream from the interior bottom and sides of the freezer bowl because it's made of aluminum and scratches incredibly easily, it's a terrific unit. |
Question: | my machine will not freeze the mixture after the tub in freezer for a week. its like cold milk with some ice. two different batches same results. Why |
Answer: | Quality ice cream from plain milk?? no way! I use half and half along with heavy cream and get the most delicious ice cream you can imagine! and in only 25 minutes. Also turn your freezer down. If your freezer is empty it may not even go to zero degrees! I clean and rinse the tub quickly and return it to the freezer quickly. Its still mostly frozen when I put it back in and only takes 2-3 hours to refreeze completely! I bought a second tub but never need to use it! This thing has worked perfectly for me and everyone loves my ice cream! The secret is in the better ingredients. more costly yes...but sooo worth it! My recipe: 3cups of half and half. 2cups of heavy cream. 1&1/2 cups of C&H sugar dissolved in the cream. 2 table spoons of imitation vanilla. 1 tiny pinch of salt. Try you will love it! Please don't order a round steak and expect a filet mignon. life does not happen that way. ENJOY! |
Question: | Is the interior of the mixing bowl stainless steel |
Answer: | The interior of the mixing bowl scratched after first use. So I don't think it is stainless steel |
Question: | Is Cuisinant ICE-30BC machine easier than Cuisinart ICE-21 to use |
Answer: | They both look exactly the same in function, its just the 21 is a bit smaller and has more plastic. Check this guy's video on Youtube and it breaks down the ICE-21. http://youtu.be/jPPdSCHBTR4And he did the same for the ICE-30BC: http://youtu.be/Q40vHKdJmpY |

Question: | What are the dimensions of freezer bowl |
Answer: | 6" tall 7" wide |
Question: | I'm quite confused. The listing says that it doesn't use rock salt but these reviews indicate that it does. Salt or no salt |
Answer: | The confusion is being caused by having all three listed as if they were color options. The WHITE 68880 (left) and RED 68881 (middle) models are 1.5 qt and use a freezer container and NOT ROCK SALT OR ICE. The WHITE 68330N model (right) is a 4qt that uses rock salt and ice. All three are listed near the "Color" selection box on the their main pages and have the same pool of customer reviews. |
Question: | Does anyone know if you can buy the freezer bowls by themselves? I really like this machine and would love to have a couple of extra bowls |
Answer: | Yes, I finally called Hamilton Beach with the phone number off of there site and found that they do sell the freezer bowls by themselves for $9.99. But, they are out of stock for now and I was told to call back in couple of weeks. Hope this helps. |
Question: | The product description says no rock salt required, but most of the reviews mention using it. What's the story here |

User questions & answers
Question: | Has anyone left the sugar out (or only used a couple of tablespoons)? How does the amount of sugar affect the texture of the finished product |
Answer: | Short answer: no. Dissolved solids are what suppress the freezing point and sugars are your primary source of these. You can reduce sugars by substituting some other solids, like nonfat dry milk (make sure to get 100% skim milk solids). Is your goal reducing sweetness or reducing caloric sugar? If the former, change the sugars you use. Use a mix of dextrose (pure glucose) and table sugar. Dextrose is only 70% as sweet but has nearly double the freezing point suppression. If you want sweetness but no the sugar calories, a portion of the sugar can be replaced by non-digestible sugar alcohols. I'd recommend erythritol. But be careful; if you consume too much it can cause digestive discomfort. And it doesn't taste 100% like sugar. I wouldn't substitute more than 60% of the sugar or so. |
Question: | Can I make a pint of ice cream in one use, or do I have to make the full 1.5 qt |
Answer: | Absolutely you can. And like Calvin said, the less ice cream you make the faster it freezes. I have had mine for over a year now and it continues to work flawlessly. Excellent product. |
Question: | Trying to decide between Cuisinart ICE-100 and Breville BCI600XL. Would love your thoughts |
Answer: | I bought this machine at an estate sale for $15. It looked like it had never been used. I just pulled it out after about 3 months. With no experience at all having made ice cream I watched some YouTube videos and decided on a custard base (made with egg yolks). I pour straight into the machine hot from the stove and in about an hour and 20 minutes I have soft serve ice cream. It’s the best I’ve ever had. The machine is a dream! It’s SOOOOO. Easy to use AND addictive! My first day I made 3 quarts of frozen custard. I don’t think I’ll ever buy ice cream at the store again. |
Question: | Really? (Amazon) claims 45% savings off price ($545). Come one, retail price from Cusinart is $299. zero/nada/0 % savings |
Answer: | Yup, I agree. It is sad indeed that I have to go to other online retailers to figure out the current retail price vs what Amazon calculates it to be to raise the % to make it look like a steal....and after seeing that I am only getting like $4 off of a high priced item, then most daily deals that grab my attention go ignored after calculating the tax vs. Eb @i which still doesn't charge tax. It reminds me of a store that opened up about 10 years ago at the mall. They sold made in china houshold furniture that looked nice. They would have a cheap made wooden chair with a ticket price of $499 but since the store was always at a "closing sale" then you could get everything on the store at a whopping 75% off! That store had a closing sale till it did close about 8 years later. |

Answer: | Yes, I re-freeze this after making sorbet/ice cream and then put the frozen treat in a container that fits inside. I thencover with another cold/freezer pack and put in cooler bag. After 1.5 hours of driving the sorbet was still solid. |
Question: | Has anyone ever successfully made 2 batches of ice cream without re-freezing the canister between productions |
Answer: | I have tried it and no, the second batch did NOT freeze up properly. Since I often have two flavors when I entertain, or need more than 1 and 1/2 quarts of ice cream, I bought a second canister. NOW I can make two batches in a row. |
