Question:	What is the longest time you can set it for slow simmer
Answer:	The higher the wattage the faster the unit will heat up but it will be at the cost of burning more energy. For stir fry you may want to start at 1800 then drop down to 1300 if possible. Also with stir fry I believe you will lose more of the nutrients at a higher wattage setting, however the higher wattage the less amount of cooking time will be required.
Question:	I need to fry at 175 but cannot set it at that temp. Why
Answer:	If you could be gentle you could cook without scratching, but you just can't. Our cooktop is scratched but it's more durable than you would think and you have to look hard to see the scratches. Ours has been used at every meal for months now and has been a great investment for us. The only advice for cast iron or stainless that I could give Don't drop it on the cooktop
Question:	what is the cooking area measure for the hot surface
Answer:	My wife who is a gourmet cook loves using it. Remember that only certain pans will work with this product (i.e. iron clad, steel, etc). But there is a lot of cookware that is available for it or that will work. I have bought this product for a couple of friends that use this instead of their Viking stove because it works well and is an easy cleanup. It's also great for slow/low cooking, but you will have to re-start it every 2 hours due to it's automatic timer shutoff.
Question:	Does the timer automatically shut the heat off
Answer:	The bottom of the pot (the part that contacts the cooktop surface) can be up to 11". If More than that the pot will touch the front control panel which is flush with the rest of the surface. The control panel is made of a different plastic and looks like it might not tolerate contact with a hot pan. I have used a 15" flat bottom wok but the bottom diameter was only 9". Also, the induction coil is only about 6 1/2" diameter so large bottom cookware would get less heat at the perimeter--a condition that might not be convenient depending on what you're cooking.

1.This unit will only operate with suitable cookware made from cast iron, enameled and stainless steel.

It will not operate when using aluminum, ceramic, copper, glass or Pyrex cookware, or any cookware with a concaved base.

Answer:	No,it is a direct wire in.There is no plug for this product, it needs to be hardwired with 220-240 voltage.

1.Automatic shut-off:

A. The hot plate turns off automatically after 120minutes, if no input was given over the operator control panel during this time. This switching serves as security for you.

B. The auto-pan detection will turn off heating when cookware removed from the cooktop and shut the unit automatically after 60 seconds if no cookware is detected.

2.When the unit off, the fan may continue running until the temperature of the induction cooker is below 120℉.

3.Never heat empty cookware. This will cause the unit to overheat, damage the cookware and/or cause the unite unit shut off.

4.You may think the induction cooker is loud, but, this sound comes from the heat sink fan of the internal magnetic coil (the principle is similar to the cooling fan of a notebook). When the power is high, the internal temperature needs to be cooled at a faster speed to keep the circuit board and the wire reel safe, so the fan will run at high speed at this time, which is a normal working state! Another reason is that the bottom of the pot is uneven, which causes uneven heating and makes a louder sound.
