| Answer: | This pan is not coated with non-stick material; it is made of tinned steel. So, you will need to brush melted butter and/or sprinkle flour into the cavities before adding the batter. It is a bit labor intensive but I use my small silicone brush for the butter to make it go a little faster. And when removing the madeleines after baking allow them to cool for a few minutes, then gently pop out with a plastic or silicone lifter. There is some work involved with the madeleine pan but believe me it is worth it! The little cakes are wonderful. |
