| Answer: | The box just says "food grade stainless steel". But it is heavy, not like some flimsy other pans I've seen. I really like using it. Haven't experienced any leaking around the base and having a handle makes it easy to remove from my Instant Pot pressure cooker. It also cleans up easily and after many uses still looks brand new! |

| Answer: | Grease the pan insert and sides generously with butter or shortening. You then make a graham cracker crust and compress it into the bottom of the pan. Then freeze it for half an hour. That makes a solid seal that will hold the thick creamcheese filling while it cooks. I like to use a sheet of parchment paper for a lid, held on with a heat resistant rubber band. They sell them to hold roasts while cooking. Cut a slip or two in the top and cook. Any moisture from the pressure cooker lid will roll off the parchment and your cheesecake will remain dry and without water sitting on it when finished. |

| Answer: | We don't use aluminum foil either. I usually use baking parchment paper. I use the bottom as a template to cut the paper and then I cut a strip to fit the sides. I stick the paper on with butter. Works like a champ! However, I suspect you could just use the plain pan and your cheesecake would release after it's been in the refrigerator overnight. |

- Please note to take gentle care of your pan. I recommend hand wash only in warm sudsy water and use a soft dishtowel to dry thoroughly before use. The inner liners are all high quality cookware made of carbon steel, do not use sharp sharpening on the surface of the pan to protect non-stick coating.
- If you use a whole box cake it will work great, but please note because of the weight and amount of batter, you may get slight leakage on the bottom. This too will not affect your cake and it will be mile high and delicious.
