Question: I just puchased one but can't remove the stainless steel lid from the plastic top with the holes in it. Is there a trick to this
Answer: I haven’t tried. I’ve unscrewed the lid all together to fill the glass portion. I love how you can move the metal to various positions to enlarge or reduce the size of the holes.
Question: Is the "closed" position airtight? I'm looking to prevent pantry months but still have a shaker I can use for flour when I"m baking
Answer: The opening of the holes are able to be closed up. I'm not positive how 'air tight' it is, but you can no longer see the holes when you twist the top. I use mine for grated cheese and keep in fridge.

Answer: Derek Dean and LA Demo are basically correct in their answers but (for me) were hardly helpful. AZamora and Katie Mathers haven't a clue. I am 80 with arthritis. I had to be creative. I found a small pair of needle-nosed pliers that, when fully open, allowed the tips of the pliers to enter two holes in the center "star" pattern (inside the lid, white plastic). This allowed me enough "good grips" of the white plastic to turn it relative to the stainless portion. You need to line-up the tiny black circle on the stainless-steel rim with the tiny triangle on the white plastic rim. This alignment is also the key to the re-assembly of the TWO-PART lid. I purchased 4 of these. As I was attempting this "separation", I actually thought that I was destroying the cap and would lose 1 shaker. As it is, my perceived strength (muscle memory?) far exceeds my present actual strength. If I applied the same "attempted" force to this item when I was a younger man, I would have expected the white plastic to explode into a thousand pieces. So, if you have muscular deficiencies, just apply more force. Don't hold back. The white plastic is stronger than you are, lol.
