Answer:	The book states 21 ounces, and yes that is pretty accurate. It's over a pound (16 oz's). Visually, it is a very good amount. I am currently making several pounds in succession as gifts for the holidays - I would advise a good long break in between each usage to avoid an overload or overheating (the machine does not get hot at all, just wiser to let it rest) - which is what I have been doing. I'll say it again though, this appliance is amazing.....

Answer:	The KPRA & KSMPRA both come with 1 Roller & 2 Cutters (1 does spaghetti thickness, the other a fettuccine thickness), making it a 3-Piece Set. The difference is this....KSMPRA is supposed to be a commercial type Stainless Steel Set, whereas, the KPRA is all metal pasta set (& I believe more for home use). However, if make lot of pasta, I'd go for Stainless Steel commercial quality set (KSMPRA) instead. Answer:	Mine came with a vice clamp and it opens wide enough for me to use on my butcher block island. This island is much thicker than the Corian one I had in my other house.

Answer:	A small amount of salt added to the pasta mix will NOT weaken the gluten appreciably (always added to artisan bread dough) nor will it harm the texture or cause it to "disintegrate" while it is boiling. All of that may be scientifically accurate in its pure form, however if you want to add flavor to your pasta add some to the dough and a good bit of salt to the boiling water, but not so much as you would have added if making bland (saltless) pasta dough. In the case of using this machine, he harm in adding salt to the dough is that (over time) it will pit and eventually damage the surfaces of the machine... yes, even though it is "Stainless" steel. Each time you increase the number on the side of the machine you make the rollers come closer together.
