Avocado Toast with Herbed Breakfast Potatoes

Ingredients:

Avocado Toast: Baguette, Avocado, Juice of 1/2 lime, 1/2 tsp. olive oil, salt and pepper

Herbed Breakfast Potatoes: 4 lbs yukon gold potatoes (unpeeled/cubed), 1 cup chopped shallots, 1/2 cup olive oil, 1tbspn coarse kosher salt, 1 teaspoon ground black pepper, 6 tablespoons chopped fresh parsley, 4 teaspoons chopped fresh thyme, 2 teaspoons paprika.

Directions:

Avocado Toast: Slice baguette in half lengthwise and toast. Slice avocado and arrange on the toast. Drizzle juice of 1/2 a lime and 1/2 tsp. olive oil over avocado. Add dash of salt and pepper to taste. Serve and enjoy!

Herbed Potatoes: Boil potatoes in salted water for 6 minutes and drain. Toss potatoes with shallots, oil, salt and pepper in large bowl to coat. Oil two baking sheets, distribute potatoes evenly. Roast for 35 minutes, adding 2tbspn of parsley and 2 teaspoons thyme, 2 teaspoons of paprika over potatoes. Turn potatoes and roast an additional 20 minutes. Remove and transfer to serving dish. Enjoy!

Answer:	I'm going to be honest and say, maybe. I just looked at the box which made me change my answer. My box says One Touch UltraMini with delica. If it says "with Delica" on the box then yes, it does have the lancing device. (mine included 10 lancets too) The original Amazon ad that I saw this question on, didn't say "with delica" on it, but when I look at the box shown above my answer it does say it. I'd suggest you check and make sure the ad lists the lancing device as included. The only ad on Amazon that I found that actually says "with Delica" is about $10 more. (but they use a picture for the wrong box, which doesn't show the picture of the Delica device.) Answer:	The unit I purchased came with a limited number of needles and strips. The needles are specialty and extremely expensive the strips are also specialty and extremely expensive. I used and alternative knock off brand of strip which is much cheaper but highly inaccurate. I don't recommend this unit for anything other than it's very convenient compactness.

Salad: 6 green onions minced, 3 cups freshly minced herbs (basil, cilantro, mint, parsley, thyme etc), 1 cup shredded sharp white cheddar cheese, 2 cups cooked fresh green peas (or frozen thawed and uncooked), ¼ cup walnuts (roasted), springs of the same herbs above and fresh, edible flowers or microgreens.

Preparation: Combine all ingredients for the vinaigrette and add salt and pepper to taste. Whisk to blend and reserve. Combine shredded white cheddar cheese, fresh cut herbs and green onions with cooked peas. Toss gently to combine. Combine salad with vinaigrette. Garnish with roasted walnuts and herbs.
