Answer:	I think you would need to make them thinner for dehydrating, but it would be difficult to do so. I saw a slicer on Amazon, maybe from the same seller, that sells one that does even smaller slices. Look for that one!

Answer:	I do not use it in a commercial capacity, but...it is the most sturdy, heavy duty, solid metal utensils I have purchased. There are no moving part to break and the heavy-duty thickness and weight of the product (in my opinion would make it ideal. My only misgiving about its use in a commercial kitchen, coring hundreds of apples a day is that this corer is best for a larger apple. You can use it on smaller (bulk bag organic-type type apples, but you will need to spend a bit more time nestling the center into position before you push down. On medium to large apples it is perfect. Simply center the core, bang, and twelve beautiful slices. Finally, I do use a cutting board and slam it down quite strongly, if that speaks its durability.

Since the thing you are describing is not a brush, I'm going to assume that what you think is a 'disposable razor' is actually the peeler. A peeler is a tool that you would use to remove the skin (or peel) from the apple prior to using the Apple Slicer. I sure hope that helps since I wouldn't want you to use it as a disposable razor.
