Maintaining your Knife’s Edge

For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best, but remember that a honing steel will not sharpen a dull knife. Honing steels are maintenance tools and are used to help keep an already sharp blade from degrading. During use, a knife edge becomes rolled or turned from direct contact with cutting boards, bones or other hard objects. In this case, honing is necessary to straighten the edge of the knife. After significant use, the steel particles become damaged and the edge cannot be brought back by honing, so sharpening is necessary. If your knives are dull, pitted, or you see visible nicks on the cutting edge, you’ll need to sharpen with a Swiss Sharp Handheld Sharpener (49002) or bring to a professional for re-sharpening.

In 1884, Master Cutler Karl Elsener opened a cutlery shop in Ibach, Switzerland. Answer: The handles on these small Victorinox paring knives are either Polypropylene or Polyethylene. But don't sweat it, they are very durable and dishwasher safe. I have one of these with a white handle and it has lasted for at least 15 years, with weekly touchups on a diamond honing rod, and there is no visible wear at all. Victorinox cooking knives last a lifetime, and stay sharp longer than any other chef knives I've ever tried.

Answer: Yes, I easily sharpen mine at home with a diamond sharpener. Using 4 different grits ---200, 300, 400, 600, I can quickly & easily get it razor sharp. So sharp it will cut just by touching it. I use a steel for touch ups in between. I've used it daily for the past 9 years and it still looks and performs perfectly. Since it is so small and I use it all the time I hand wash it. Just need to be careful not to cut up the sponge/dishcloth. It holds it edge well but like I mentioned it is a daily workhorse in my kitchen so in order to keep it super sharp I give it a quick touch up sharpening weekly. If you don't care if your knives are razor sharp or don't use it daily, sharpening once every month or 2 would probably be adequate.

Answer: thats the size of the package.....i guess they took the easy way out on the listing....One is a small parer and then the longer one is apx 7 - 8 inches. These are very good knives. Both would be handy to have. They last and can be sharpened. The only time I get rid of one is when someone accidentally throws it away....buggers.

Answer: The blade on the larger knife is 4 in. The smaller knife has a blade length of 3 1/4 in. Both measurements were taken on the bottom of the blade. Hope this helps.

Answer: Simple science, the knife is steel. I used a magnet to try and determine the dimensions of the tang. I speculate that the tang is a trapezoid shape. On the spine side of the blade, the tang goes back the furthest, about 1 inch. On the cutting edge side, it is shorter goes back about 5/8 of an inch. I didn't try to be precise, so let's say ± 1/8 inch.

Answer: Found this online: Chuppa Knives originally were similar to Rada Cutlery and other aluminum handle knives that were manufactured in northeast Iowa. Rada Mfg. Co. bought out many of the other smaller companies. Two companies that went out of business but were not purchased by Rada was Chuppa and Clearline Knife. Chuppa moved their operations to the southern US and started selling to WalMart. Eventually they moved manufacturing oversees, presumably due price pressures. Their quality declined and eventually were dropped by WalMart. Rada Cutlery continues to thrive and manufacture in Waverly, Iowa to the original high quality standards set at their start in 1948. Rada Knives are primarily sold by fundraising groups (churches, clubs, teams, schools and youth groups) who earn 40% profit as well as independent resellers (who sell from their owner-operated businesses or at fairs, festivals, shows and flea markets). Formerly Forschner



In 1937 Victorinox began selling cutlery in America through a Connecticut distributor called R.H. Forschner & Co. A well-known manufacturer of butcher scales, Forschner soon became the exclusive U.S. distributor for Victorinox knives, and was the name by which Victorinox knives were known.









In 2011 Victorinox began marketing all its product lines, including kitchen knives, under the common umbrella name by which the company is now popularly known – Victorinox Swiss Army. Hand Washing



Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.









Dishwasher



While Swiss Classic knives are dishwasher safe, we still recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.









Maintaining your Knife’s Edge



For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best, but remember that a honing steel will not sharpen a dull knife. Honing steels are maintenance tools and are used to help keep an already sharp blade from degrading. During use, a knife edge becomes rolled or turned from direct contact with cutting boards, bones or other hard objects. In this case, honing is necessary to straighten the edge of the knife. After significant use, the steel particles become damaged and the edge cannot be brought back by honing, so sharpening is necessary. If your knives are dull, pitted, or you see visible nicks on the cutting edge, you’ll need to sharpen with a Swiss Sharp Handheld Sharpener (49002) or bring to a professional for re-sharpening.









History and Heritage



In 1884, Master Cutler Karl Elsener opened a cutlery shop in Ibach, Switzerland. There, he and the cutlers’ union he formed produced the finest steel cutlery, finished with the now-famous proprietary edge preferred globally by professional and home cooks. In 1891, Karl supplied the Swiss Army with its standard issue Soldier’s Knife and in 1897 with the Officer’s Knife. In 1921, after the death of his mother, Victoria, and with the advent of stainless steel, then known as “inoxydable” and used in the production of his cutlery, Karl changed the name of the company to Victorinox. It is from those humble beginnings that a worldwide icon was born.









Today, Victorinox is still owned and operated by the Elsener family, and both the company and family still resides in the small village of Ibach, Switzerland.

Answer: From the store "Bed, Bath, and Beyond" is this answer... These high carbon, no-stain steel knives are hot drop-forged and feature polyoxymethylene handles. Is this a plastic to you? I prefer to lump it in the "synthetic substance" category. ॐ

Answer: Very sturdy blade. Not flexible. I will say this is one of the best knives I own. Actually my favorite. Don't think I've ever sharpened it either and I use it everyday.

Answer: I have the 5" blade knife which is excellent. The overall length is 9.5" Must be a misprint unless it is a model for people with really wide hands ;-)
