Answer: | The Zwilling JA Henckels flexible fish knife is better for filleting fish because it has more "give" in its flex than the boning knife. Choose the knife you will use most. We have both. I use the boning knife for poultry and my partner, the fisherman, uses the filet knife. |

Answer: | I would sharpen a Zwilling/Henckels Pro knife either with a sharpening stone or at a professional knife sharpener. The pull-thru sharpeners will sharpen the knife; however, they take off a lot of metal in the process which will shorten the life of the knife. |

Answer: | They’re made in China and, for the money, I was so displeased, I returned them, immediately. There’s something wrong with the angle of the cutting edge. It’s way too shallow so the knives don’t slice neatly through larger, tougher foods like winter squash or sweet potatoes. I had to have help getting a knife out of a butternut squash after it got wedged in it. I’ve been cooking for 60 years and was really looking forward to these knives. Disappointed. Waste of money. |
