Answer: | The beauty of a knife like this is that it is made from a softer "Stamped" steel. Basically these knives are cookie cutter cut from sheets of steel rather than being drop-forged like the more expensive knives Wusthof and other fine cutlery brands make. The reason that is important is because stamped steel knives are very very easy to sharpen, and I mean REALLY SHARP sharpen. Of course, the down side is they don't keep their edge as long. As a professional I highly prefer these types of knives for every day kitchen use in a restaurant setting. When my Wusthof Classic's start to get dull I have a choice of either spending a lot of my own time sharpening them or sending them out to be sharpened... last time I did that with I think it was 4 knives, an 8" Chef, a 6" boning, a 4" pairing and a 14" slicer. what I didn't realize was that the shop charged for sharpening service by the inch :)) Long short answer is that with a diamond steel and a cheap v sharpener you can keep these cheap stamped knives near razor sharp with just a little daily effort. Since they are so cheap (comparably) you can even choose to replace them every year or two... or never! In my 12+ years as a Chef and kitchen grunt, I bought my last set of expensive forged knives 10 years ago... I will only be getting stamped knives such as this one ever after. |

I normally do small fish like bluegills and trout and have found this knife to be a tad long for the tight spaces and precision cuts. I haven't had any issues on larger fish like walleye and pike though. I also have used the knife for processing venison and it works quite well. Like all my Wusthofs, it's razor sharp and good quality steel, so it stays that way for longer periods. |
