Answer:	I can't tell you yes or no. I have only used it on meats. As a fisherman, I would get a good quality filleting knife over any electric knife. With a filleting knife you can feel where to glide it right next to the bones. I can't see how you can "feel" this with an electric knife.

Answer:	Hi Mike, Thanks for reaching out, a good steel will out last any home chef. Know your knife know your steel. They will travel together. Knives come from the factory with an edge, you can replicate that with a course steel. Or you can get a machine or butcher eg. Do a quick YouTube search on how butchers keep knives sharp. They the boss when it comes to blades. A fine steel will maintain an already good edge nicely, I will use a fine steel for my knives like a good Carpenter will give a quick honing to his chisels every few uses. Answer:	The knife has hollows on BOTH sides. Two of the four product pictures on Amazon.com are misleading since they appear to show a side of the knife in questuon without the hollows. As such, these images should probably be removed from the listing since they are clearly not depictions of this particular knife.

Answer:	Yes. Typically I've seen sushi chefs using a Santoku for this, but I have cut sashimi (tuna blocks) with this meat slicer and it works fine. Thin and very sharp blade, with scalloped hollow edge helps prevent fish & meat from sticking. If you can find one for under a $100, I think it's a good deal. Shun also makes a number of Santoku hollow edge knives, from under a $100 to over $200, more traditional for preparing sushi.

The blade is 9 1/2 inches long where is starts to flare out at the handle which is where it would sit in a knife block. From that flare point the handle is 5 inches long. From its point to the very back of the handle is 14 5/8 inches. This is a beautiful knife and extremely sharp so always be very careful. A simple careless slip can leave you with a nasty cut.

I disassembled it and the switch fell out on the bench in small broken plastic parts and one metal "Z" part which was the basic part of the Switch with one end seated inside the button. Based on my experience it is my opinion you are experiencing premature switch failure due to a broken plastic part which is partially blocking the switch button and if it has not failed already it probably will do so.The Cuisinart CEK 40 works well for me but cannot be used on heavy bones or gristle. It has a manual lock on the switch to prevent you from turning it on accidentally when not in use and plugged in. The switch is very easy to use but you have to be very careful not to press the switch when you are holding the knife (with the lock off) and getting ready to slice the ham or roast. The blades are stainless steel and very very sharp and will cut your fingers in a heart beat experience taught me so.

Answer:	this one of the few bad purchases I've made on Amazon. The knife was so flimsy it spread apart carving turkey. purchased a Rapala knife- infinitely better.

Answer:	I had the same issue. Bought it last April and tried to cut a ham, but all it did was shred the meat. Tried again at Thanksgiving on the turkey, again with the same result. So I called the 800 line and spoke to Victoria on 12/12/17. Got a case number and was told the parts are not in stock and to call back in 4-6 weeks. Called back on 1/8/18, spoke to Lenisha, and was told to call back 1/16/18. Called back on 1/16 spoke to Bree and was told parts not in stock. I voiced my displeasure and was then told to take my complaint to Amazon. This is very shabby treatment. Since it was past the 30 days I cannot return the knife. Oster is not a reputable company to treat customers this way.
