Question: Will it change the colour of an onion like carbon white steel
Answer: Never! Eventually a dishwasher would destroy the handle. No matter what I cut, I clean the knife with a swipe or two with a soapy brush (keeping it away from the handle) and the quick rinse of the blade, and carefully dry it with a swipe of a dry towel. CAREFULLY!, I once cut my finger pretty bad from reaching too far down the blade while drying it.

The blade material is made from Japanese VG10 Super Steel and is honed to 12-15 degrees per side which is typical for Asian knives so from the perspective of blade material and sharpness, definitely Asian style. However, the knife also comes with heft, strength and balance which is traditionally recognised as that of a Western style knife.
