High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 8-inch chef's knife is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety.
Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. Razor Sharp Edge
The most important feature of any knife is its edge, and the GLOBAL edge is truly its signature. The majority of the GLOBAL knives are sharpened or ground on both sides of the blade, just like Western style knives. The edge on a GLOBAL knife is so large and prominent that it is easily seen with the naked eye and extends a quarter of an inch or more up from the tip of the knife.

Answer: | I think you want a fine edge when doing that, so something that has an angle of 14 degrees or less for the cutting edge, on each side, or a blade that's only beveled on one side, and also a blade that doesn't get very much thicker as the blade cuts through. A high quality Chinese chef knife is good, or getting a blade such as the manufacturer suggested is good. I use a European 8" chef knife to cut through sushi rolls, but I have it sharpened at 14 degrees and the blade is thin, but I have to rinse it about every 4 cuts. I also have to hone it more often because of the fine angle. |

Could you tell me more about what is different on the blade? They are phasing out the Swiss emblem at the factory, so you will start to see just "Victorinox" on the blade. I believe the item number should still be there too though. Not all 3rd party sellers on amazon are "authorized" sellers, meaning they are not buying their knives directly from us. Answer: | Hi. I'm from Victorinox. The knife has a 50% tang. Most stamped knives have what's called a "rat" tang, which is usually much shorter and can sometimes come loose. The tang will never come loose from the handle and that is guaranteed in our warranty. Professionals in meat processing facilities use our knives all day long. They are balanced for the weight of the blade and handle. Knives that have a heavier blade, need a full tang for balance. |

The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

Answer: | I believe it's just rye grass. Thin blade, I mixed it with Kentucky blue grass. Which is a thicker blade grass. The rye grass germinates in like 5 days and helps speed the germination of the blue grass which alone takes like 3 weeks. If it's fresh dirt I suggest a seed accelerator it really helped speed things up I had to cut it in 3 weeks, because it was out of control. Hope this helps. |

The Miyabi Mizu SG2 Chef's Knife is used for chopping, dicing, mincing, and slicing meats and vegetables. The making of Miyabi Mizu knives start off with the Tsuchime method, consisting of 3-layers of SG2 steel with a hammered finish to allow food from sticking to the blade. Next, the Honbazuke process involves the Katana edge being sharpened with an ancient 3-step process, which sharpens the blade twice on whetstones, followed by mirror polishing on a leather wheel. This process was used over 1000 years ago for samurai swords to create the ultimate sharpness. The Criodur process gives the steel hardness for blade retention, flexibility, and highly corrosion resistant.
