Question: What's the tang situation with the Victorinox? I'd like to know if the metal goes all the way to the base of the handle
Answer: No, about 3/4's of the way. With this handle type, full tang is not important.
Question: what angle is the blade for sharpening? 15 degrees or 20 degrees
Answer: From what I could roughly measure (caliper and trigonometry), the original edge relief ("back bevel") is around 14 degrees in mine, and the blade is quite thin already at the start of the relief (0.44mm), so it is easy to go without a bevel+back bevel and sharpen at 15. You can however work with a microbevel at 20, quickly retouching between resharpenings.
Question: Does this knife have enough knuckle clearance so you can dice on a cutting board as you would with a normal 8" chef knife
Answer: I think that you would have to have very small hands to be able to have a full grip on the handle to have "knuckle clearance" when mincing. I have to grip the handle without my fingers going all the way around to mince using the rocking method. The blade width is much narrower than another 6 inch chef knife that I have that allows a full grip with knuckle clearance for mincing. That said, I think that you can mince just fine with this knife, but you will have to grip it a little differently.

Answer: It's actually an 8 inch blade. They are advertising a 10 inch blade, but it's a bait and switch--you are getting the smaller (cheaper product). Like paying for an Acura and getting a Honda. I provided picture of the conflicting marking on the packaging (one saying 10 inch and a barcode for the 8 inch) and I submitted a picture of ruler measuring the blade, so buyers can see. It's a good knife, but buy it from a different seller who will send you what you are paying for.

Question: what is the frequency of sharpening needed for home based use
Answer: If you're cutting through food where you're hitting the cutting board pretty hard, you'll need to hone the blade more often, but if your cutting soft vegetables and use the speed of your motion and not how hard you push down do the work of cutting, then you probably have to hone it once a month with regular use. Cutting through harder vegys means you're going to hit the cutting board harder though, so if you do that all the time, then you'll be honing about once a week or two weeks depending on usage. Sharpening is a different subject, and if you're not constantly banging the blade down on the cutting board, or cutting around bone which will put microscopic imperfections in the cutting edge, then somewhere between 6 months and a year with continual usage. You'll know because honing won't give you a sharp edge anymore. I LOVE this knife and use it a few times a week so I hone it about once a week, but I have a guide on my steel for 14 degrees and I have a hand sharpener that does 14 degrees each side so both honing and sharpening are VERY easy with this blade, and I've only changed the edge angle 1 degree (these come at 15)

Answer: The widest part of the blade is 1 3/4 in, the center is 1 5/8 inch and the last inch of the blade narrows down from 1 inch. So this is a pretty wide blade, but very light and very sharp.

Answer: I've asked this question and the answer I got from a seller, and I believe you can also get the info from Mercer, is 15 degrees. There is a Wusthof sharpener that sharpens to 20 or 14 degrees. They're newer Classic lineup has blades set at 14 degrees. People saying larger angles are probably giving info for older knives, just like your question assumed two typical angles, 22.5 or 15, when in fact many European style knives have for a long time been set at 20 degrees and the finer blades are set at 11, 14 or 15 degrees. 11 degrees is for really tough metal, so different Japanese expensive blades are set that fine. Since I have the Wusthof pull through sharpener, I've set these to 14, and though I may have to hone and sharpen more often, they cut REALLY easy, and I LOVE this knife set that way. 22.5 is typically the angle for a heavy meat cleaver nowadays, or maybe knives that you buy for heavier outdoor cutting.

Care and handling of Genesis cutlery.

The performance of a knife can be diminished if not cared for properly.

Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.

Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

Answer: No issues because your never holding the spine perfectly level against the board. In fact the spine actually angles downward as it reaches the tip which when inverted will allow more of the spine to lay flat against the board.

Answer: I am not sure if you are seeking thickness or height. Measured by micrometer, my blade thickness (as close to bolster without measuring the flair easing into the bolster as possible) is .101" (2.56mm), and at the width at the center of the blade is .079" (2mm). Blade length to the point of the bolster stated above is ~7.75", and the maximum height (from the cutting edge of blade to top, flat of the blade) is 1.775" (45.1mm) near the handle, and at the center of the blade the height is 1.7" (43.2mm). I am very happy with this knife, and I hope these measurements help you!

I don't have a compass nor protractor, but I estimate the angle, based on a scientific background, to be less than 20 (?) . . .it is gently curved and the knife continues to give me more joy in the kitchen since gifting it to myself at the holidays, than any other in my well stocked knife drawer . . .You will not be sorry if you buy this knife.

Answer: As said in the previous answers, the steel is going to be the same. The differences are in the bolster and the handle. In the classic, the bolster goes along the full width of the blade, whereas the Ikon has a partial bolster that is about the same width as the handle. The handle on the two are slightly different materials, but the big difference is in the shape. The Ikon is more rounded, and the Classic is more rectangular, but still with rounded edges. It would probably be best to go into a physical store in order to hold both and see which fits better for your hand. As far as I know neither of these differences makes a huge difference, just a matter of preference. The full bolster on the Classic makes it harder for some people to sharpen, but others have no problem.

Care and handling of Renaissance cutlery

The performance of a knife can be diminished if not cared for properly.

Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.

Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.
