11 best culinary knifes
Culinary knives are essential tools in the kitchen, each designed for specific tasks to make food preparation more efficient and precise. Here's what you should know about culinary knives:
Chef's Knife: Also known as a cook's knife, this versatile knife is the workhorse of the kitchen. It typically has a broad, triangular blade that tapers to a sharp point. Chef's knives are ideal for slicing, dicing, chopping, and mincing a wide range of ingredients.
Santoku Knife: This Japanese knife is similar to a chef's knife but has a shorter, wider blade and a flat cutting edge. It excels at slicing, dicing, and chopping vegetables, making it a popular choice for Asian cuisine.
Bread Knife: Bread knives have serrated blades designed to cut through crusty bread without squishing the interior. They can also be used for slicing delicate items like tomatoes.
Paring Knife: Paring knives have small, narrow blades with a pointed tip. They are perfect for precise tasks like peeling, trimming, and intricate cutting.
Utility Knife: Utility knives are mid-sized knives that bridge the gap between paring knives and chef's knives. They are versatile and suitable for a variety of tasks, including slicing and chopping smaller ingredients.
Carving Knife: Carving knives have long, thin blades with a pointed tip. They are designed for slicing thin, precise cuts of cooked meat, such as roast beef or turkey.
Boning Knife: Boning knives have narrow, flexible blades that make it easy to remove bones from meat, poultry, and fish.
Cleaver: Cleavers have large, heavy blades with a thick spine. They are commonly used for chopping through bones and tough cuts of meat.
Nakiri Knife: Another Japanese knife, the nakiri knife, has a rectangular blade with a straight edge. It is specifically designed for slicing and chopping vegetables.
Kitchen Shears: While not a knife, kitchen shears are an essential tool for cutting herbs, trimming fat, and performing various kitchen tasks.
Knife Accessories:
Knife Sharpener: Keeping knives sharp is crucial for safe and efficient cutting. Knife sharpeners, such as whetstones or electric sharpeners, help maintain a keen edge.
Knife Block or Magnetic Strip: These storage options keep your knives organized and within reach while protecting their blades.
Knife Guards: These covers or sheaths protect knife blades from damage and keep them safe during storage or transport.
Knife Honing Rod: Honing rods are used to maintain the knife's edge between sharpening sessions by realigning the blade.
In the world of culinary knives, it's essential to choose the right knife for the task at hand and maintain them properly to ensure they stay sharp and safe to use in the kitchen. Different knives excel at different tasks, and having a well-rounded set can greatly enhance your culinary skills.

User questions & answers
Question: | Where is it made |
Answer: | I was all prepared to tell you how much I loved these knives and I do love them. This is my go-to knife for bread, cheese, and tomatoes. However, I have no idea where they are made. Sorry. |
Question: | Is it made in China |
Answer: | Made in TAIWAN. |
Question: | How is this different from the Genesis series blade |
Answer: | These are bare bones blades meant to get beat up doing rugged tasks like boning and quartering animal carcasses. When you need a knife that you can rely on working on a line this is the type you want to grab. When you're looking for fine cuts and sophistication you'll want a higher quality blade like the genesis. If you notice, the taper on these commercial blades is a bit sharper; they do this to save money because they don't have to feather all the way back to the spine. It makes the blade look cheap but that's part of what ultimately makes these knives invaluable in commercial kitchens. |
Question: | Can the mercer culinary ultimate white 11-inch slicer, wavy edge be sharpened |
Answer: | Of course! but not with traditional whetstones. All knives can be sharpened, you just have to have the correct tools in order to do it. Just look for a serrated edge sharpener, I'm sure they sell them on amazon. |

User questions & answers
Question: | Many reviewers mention the knife arrived dull! Is that the case?!?! Please respond |
Answer: | We factory sharpen all of our double bevel chef knives to 15 degrees |
Question: | is it serrated |
Answer: | I think you want a fine edge when doing that, so something that has an angle of 14 degrees or less for the cutting edge, on each side, or a blade that's only beveled on one side, and also a blade that doesn't get very much thicker as the blade cuts through. A high quality Chinese chef knife is good, or getting a blade such as the manufacturer suggested is good. I use a European 8" chef knife to cut through sushi rolls, but I have it sharpened at 14 degrees and the blade is thin, but I have to rinse it about every 4 cuts. I also have to hone it more often because of the fine angle. |
Question: | what is the angle of the factory edge on the culinary genesis and culinary millennia chef's knives |
Answer: | Hi. I'm from Victorinox. There are variations in the mold used by the factory for the handle. The handle is the same though and still made in Switzerland. Could you tell me more about what is different on the blade? They are phasing out the Swiss emblem at the factory, so you will start to see just "Victorinox" on the blade. I believe the item number should still be there too though. Not all 3rd party sellers on amazon are "authorized" sellers, meaning they are not buying their knives directly from us. It is best to buy directly from amazon or an authorized 3rd party seller. |
Question: | Will this knife cut sushi without shredding the nori |
Answer: | Hi. I'm from Victorinox. The knife has a 50% tang. Most stamped knives have what's called a "rat" tang, which is usually much shorter and can sometimes come loose. The tang will never come loose from the handle and that is guaranteed in our warranty. Professionals in meat processing facilities use our knives all day long. They are balanced for the weight of the blade and handle. Knives that have a heavier blade, need a full tang for balance. |
