Product description

Derived from the Japanese word “shun,” meaning the precise moment when any given food is at its optimal ripeness, Shun draws on their heritage to provide elite kitchen knives at the peak of perfection. With skilled specialists handcrafting the blades, Shun knives embody high-quality performance with blades that join ancient traditions with cutting-edge technology. The blades are made with VG-MAX steel, an innovative formula exclusively produced for Shun to provide optimal durability, strength, sharpness and corrosion resistance. The blade is bead-blasted to reveal the layered steel that supports the strong, V6-MAX “super steel” cutting core, giving the appearance of a rippling texture. This classic, elegant finish makes the knife a functional piece of art and an exquisite item for any kitchen. The functional Shun Classic 9-inch Bread Knife makes slicing bread easy, simple, and hassle-free.

A member of the stylish Shun Classic line, this bread knife comfortably handles everything from rustic artisan breads to baguettes--and even dessert items such angel food cake or chocolate tart. Featuring a serrated blade measuring 9 inches in length, this tool won’t tear or crush foods during slicing.

Leveraging a 90-year history of superior workmanship, Shun knives are precision-forged in Japan by renowned blade manufacturer KAI. Using technologically advanced processes, a VG-10 "super steel" core is clad with 16 layers of high-carbon stainless steel to produce a rust-free Damascus-look blade. The Damascus detailing not only enhances the knife’s aesthetic appeal, it also prevents morsels from sticking and helps avoid damaging foods. Forming a comfortable D-shaped hold, a fused blend of hardwood veneers and resin comprise the unique ebony Pakkawood handle. A traditionally offset stainless-steel bolster protects knuckles while a steel end-cap finishes the piece. Although dishwasher-safe, hand washing is recommended. This product includes a lifetime warranty. -- Amy Arnold

Question: Is this knife serrated or scalloped
Answer: The blade is 7" whereas the whole knife is 15.4" long.

Shun

“Shun” (shoon) is a concept at the very heart of Japanese cuisine. In Japanese, shun is the word used to describe local, seasonal food when it is at the peak of its flavor and freshness—at the peak of its perfection.

Shun Cutlery is known for its exquisite beauty and ultra-premium performance. Yet as beautiful as Shun is on the outside, and as beautifully as it performs in your kitchen, its true beauty may be in what you don’t see.

Handcrafted in Japan

Shun is dedicated to maintaining this ancient tradition by continuing to handcraft each knife in our Seki City facilities. Each piece of this fine kitchen cutlery takes at least 100 individual steps to complete. While we maintain these ancient traditions of handcrafted quality, we also take advantage of thoroughly modern, premium materials and state-of-the-art technology to provide that traditional quality to millions of professional chefs and avid home cooks throughout the world.

Knife Steel is Essential

Heat treatment—an invisible, yet vital, process. This exacting process is fundamentally important to ensuring that your Shun provides lasting value. In heat treatment, the metal is heated and cooled to change its microstructure, bringing out its very best properties. With precise heat treatment, blade steel becomes finer grained, making it stronger and harder so blades can be thinner, sharper, and give you a longer-lasting edge. Shun’s experts are, quite simply, masters of the heat treatment process.

Quality and Performance

Shun is the exact moment when a fruit has reached its ideal ripeness, when a vegetable is at its very best, or when meat is at its most flavorful. Home cooks and professional chefs alike celebrate shun in their kitchens, eagerly awaiting each season’s bounty and serving every ingredient in its proper time.

Shun Cutlery proudly takes its name from this Japanese culinary tradition of eating the freshest food at the perfect moment. We took this name to honor this seasonal, mindful way of eating and as a mark of our dedication to making kitchen cutlery that is always at the peak of its perfection, too.

If you've never owned a Japanese knife before, you'll immediately notice how different a Shun feels in the hand. Shun is harder, lighter, and sharper. Sharpened to a steeper angle (16 degrees) with an edge that will hold longer, the Classic line is designed to cut in a smooth, slicing motion.

Layered Steel

With a seamless transition from blade to handle, the knife's fully forged construction provides balance as the traditional triple-rivet handle encourages tireless cutting. Henckels International makes essential kitchen tools every home chef needs. From steak knives to spatulas, every product boasts high quality at an exceptional value. Created in 1895 by Zwilling J.A. Henckels, this value-driven brand guarantees the same durability, design and ease of use for which the global company is known. Equip your kitchen with expertise with Henckels International.

A crusty loaf yields easily to this knife, whose serrations are big enough to rate--in knife-speak--as "scallops." Henckels' International Classic is a moderately priced cutlery line made in countries other than the company's home of Germany. The steel is of lesser quality than that used in its premier lines. Also, the handles are narrower and shallower--a feature those with small hands might appreciate. While this bread knife is dishwasher-safe, hand washing is recommended. --Fred Brack

Product description

Tackle that crusty italian loaf of bread with the Wusthof Classic Ikon bread knife. The long serrated edge cuts easily through thick crust without crushing the tender center. Wusthof Classic Ikon is culmination of all the best features of each of the Wusthof knife lines. The combined riveted handle design is combined with a contoured shape to add comfort and control. The Classic Ikon adds a rear bolster that acts as a counter balance when using the knife. This second bolster adds significant blade control. Classic Ikon has a unique forward bolster as well. The forward partial bolster is designed so you can sharpen the complete length of the blade. This bolster is also curvered inwards to allow your fingers greater control while holding the knife by the blade. Located in The Cutlery Capital of the World, Solingen Germany, the Wusthof factory history goes back as far as 1814 when the company was listed with the Duchy of Berg. To this day, the company remains family owned. Throughout it’s history, Wusthof has focused almost solely on the manufacturing of forged knives for the professional chef and home cooking enthusiast. Wusthof uses a special blend of German steel through out the whole length of the knife. The ingredients of this steel are proudly etched on each blade. Wusthof not only uses the best materials to make a fine knife, but it is also crucial that each blade is precisely tempered. This tempering allows the knife to hold its edge for an extremely long time, yet still be able to be maintained in your home kitchen with out the need to be sent away for maintenance. Our unique compound angle is not seen in many knives. This angle tapers from the spine of the knife to the edge to allow for a sturdy, yet extremely sharp edge while it also tapers from the bolster to the tip to give the knife strength as well as flexibility.

Question: Is this a "Full Tang" Knife
Answer: The size is 9 inches or 23 centimeters.
Question: What is the length of the blade along the top
Answer: If by width you mean the distance between the edge and the spine of the blade it is close to one inch. I measured the width of ours as consistently 1 1/8" the length of the blade. So no, it is not 1 inch.
Question: Does this knife works on hard crusted round breads like sour dough bread or Focaccia breads? I want to make thin slices of these breads
Answer: It will depend on your knife block. Mine has 9 slots and I did have one to use for the bread knife.
Question: wusthof recomened sharpner
Answer: My good man, I counted twice just for you. My count is 28 if you count the very tip of the blade. Enjoy.
