Answer:	I have the 6" high, 1/3 tray and I use it tons, though don't own a steamer table. You can bake anything that fits, including a narrow ( small ), 4 layer lasagne w/ no bubble over. I also use it to brine various cuts of meat. I got the steel lid as well as the plastic, storage lid. Fits in fridge. Versatile and different shape . . .try it :)

Answer:	It is too deep for cookies. Ideally you would need a shallow or flat cookie sheet pan. Pans with high sides trap moisture and your cookies would steam instead of bake. I suppose it could work in a pinch if you had nothing else but don't get it if this is your main purpose. It would be perfect for large cakes though.
