Answer: I would think so, yes. This is stainless steal. I've made rice in non- stick pans and it sticks a little

Answer: There is the bottom pot and one that has the strainer holes that fits inside. Two layers, if that is the question. I am unaware of how many layers of metal the bottom pot has between it and the burner if that is the question.

Answer: it's to allow some steam and air pressure to escape the pot. it's basically a safety feature that prevents the pressure created by the steam and the boiling water from over-pressurizing the pot. without it at worst the lid would blow off the top or at best rattle around on top of it. but with it your food gets steamed and none of the problems already mentioned will happen unless it gets blocked in some way. hope this helped a little and as always, please have a good day.

Question: Height - is that the height with the steamer insert or just the pot
Answer: No. It does stay cool enough that pulling the lid off does not cause seriously burned fingers, but I start the water running in the sink, then quickly place the lid under the water flow, knob first. A more patient person could use a hot pad or glove.

Answer: Ecolution 'Pure Intentions' cookware is designed to be "suitable for all cooking surfaces including induction" -- It says so right on the box, and I found that a quart of water boiled very quickly in the 12-qt stockpot, started from cold on a cold cooktop. Within minutes it was steaming, then boiling.
